Banana Blueberry Bars

This healthy treat is perfect for breakfast, dessert, or a snack and is packed with important nutrients your body will love.

Ingredients

  • 1 cup dates pitted and halved
  • 1 1/2 cups apple juice
  • 1 cup oat flour
  • 2 cups rolled oats
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 bananas peeled
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries frozen
  • 1/2 cup walnuts

Instructions

  • Preheat oven to 350ºF. In a small bowl, soak dates in apple juice for 10-15 minutes. Lay a piece of parchment paper in a 9 x 9-inch baking pan, making sure the sides are covered. Cut slits in the corners of the paper so that the paper overlaps and is flat.
  • In a medium bowl, combine flour, oats, cinnamon, and nutmeg. Mix and set aside. Place bananas and vanilla extract into a blender. Remove dates from apple juice and set aside. Add the strained juice to the blender and blend until creamy. Add dates to the blender and pulse a few times so the dates are in small pieces.
  • Pour the banana mixture into the dry ingredient bowl. Mix until well combined. Stir in the blueberries and walnuts. Using a spatula, pour the batter into baking pan. Bake at 350ºF for 30 minutes, or until a toothpick inserted into the center comes out clean. Cool at room temperature for 5 to 10 minutes before cutting and serving.

  1. I don't really like walnuts. Do you suggest another nut or do you think it would be fine to just leave them out?

  2. A little late to the game but I finally got around to making these. Only modification was I substituted almonds instead of walnuts (and almond extract instead of vanilla). They are SOOOOOO good. And they freeze beautifully. I let the batch cool and then layered the pieces in a gallon ziploc with a layer of parchment paper between so they wouldn't stick together. I take one out the night before and pack it in my lunch in the fridge – it's totally thawed by morning. It is the perfect mid-afternoon snack. I am still amazed at how good these are.

  3. I think bananas are omitted from the ingredient list: Bananas are supposed to go into the blender, but I don't see the listed. How many bananas are in these bars?

  4. Delicious!!!! Will make these again and again. I am a bariatric patient and by going to the natural food store, I was able to get dates that did not have sugar on them. These are so wonderful, taste like Banana nut bread in a way

    1. Sure! Here’s a few great choices hefeweizens, dunkelweizens and weizenbocks. If you don’t have these German beers on hand, serve with a sweeter tasting beer. Hope this helps! 🙂
