Making a commitment to eat better isn’t always easy. Eating healthy usually means cutting down on trips to some of our favorite places, like ice cream shops and pizza parlors. What if you could still enjoy some of your favorite treats without the added calories and padding to your waistline? You can! Try our “Skinny” Banana Cream Ice Cream. It’s so refreshingly delicious, you’ll never guess it’s actually good for you!

Here’s a neat trick for making plain old bananas into ice cream. All you need is a freezer and a hand blender. There’s something about the texture of the frozen bananas that is creamy, smooth, and very reminiscent of ice cream  It’s amazingly delicious.

Banana Cream, A Healthy Ice Cream

This ice cream makes it easier to eat healthy by keeping away added calories and by using whole ingredients.

Ingredients

  • 2 bananas

Optional Ingredients for flavor (use any combination you’d like):

  • 1 teaspoon vanilla extract (I love Simply Organic Vanilla Extract)
  • 1/4 cup walnuts crushed
  • a dash of cinnamon
  • 1 tablespoon cacao powder
  • 1/2 tablespoon honey raw
  • 1/2 tablespoon almond butter

Instructions

  • Slice the bananas into 1/2 inch slices. Place slices into a freezer bag or airtight container and put in the freezer for 3 hours or until frozen. With a hand blender, blend the bananas together. It might take some elbow grease, but they will lighten in color and look creamy once blended. Mix in any flavorings desired and replace the mixture in the freezer in an airtight container and freeze for at least one hour. Top with seasonal fruit and/or nuts (we used blueberries and walnuts)!

  1. If I don't have a hand blender, will an electric mixer or a full size blender work? This sounds delicious!

    1. Yes, an electric mixer or full size blender will work, but blend on low to ensure that you don't overmix and obtain the right consistency.

  2. I keep a bag of frozen bananas in my freezer as a must have stock. I then put my frozen bananas in my blender and add 3 or 4 tbsp of Almond milk and then hit the “ice crush” button. I sometimes add a spoonful of peanut butter powder (very low in smartpoints which I count) but it is just great on its own. I never add any sweetener. I can eat it immediately and don’t have to put it in the freezer for an hour.
