Blue Paradise Smoothie
Every April, Skinny Ms. Fitness gets a call from her Aunt Wilma asking if she would like some wild blueberries. She can’t get there quick enough to load up on those sweet luscious berries.
There’s just something extra special about these wild blueberries. We’re not sure if it’s because they taste better than anything we’ve ever bought at the grocery store or if it’s because Aunt Wilma always thinks of us when it’s blueberry season. Maybe it’s a little of both. Regardless, we cherish Aunt Wilma and her unlimited generosity and kindness. So, this smoothie is dedicated to beautiful Aunt Wilma.

Ingredients
- 2 cups baby spinach (organic)
- ½ cup light coconut milk (organic if possible)…or skim milk will work just as well if out of coconut milk
- ½ cup pineapple juice (unsweetened)
- 1/2 cup frozen pineapple chunks (unsweetened) about 8 chunks or 1 serving
- 1 cup wild blueberries (frozen)
- ½ cup plain Greek Yogurt (0% fat)
Directions
Add all the above ingredients to a blender and blend until smooth. If you like Pina Coladas and blueberries you’ll love this smoothie. Paradise is just a sip away!
