Breakfast Yogurt Parfait in a Jar

Ingredients

  • 1 cup grapes or mixed berries
  • 1/2 banana chopped
  • 1/4 cup coconut unsweetened shredded
  • 1/2 cup granola
  • 1/2 cup Greek yogurt non-fat or low-fat

Instructions

  • Place a layer of berries or grapes on the bottom of the jar, add a layer of yogurt, a layer of granola, a layer of fruit, another layer of yogurt and a layer of the shredded coconut. Cap the jar, and off you go!

  1. This Recipe is for 3 servings? So if you were just going to make for 1 you would divide the amount by three and then the total serving would be 184 calories? Just making sure I’m reading the nutrition facts right 🙂

    1. Our nutritional data is already listed for a single serving of 1 cup, so if you only want to make enough for one, you are correct that you would divide the recipe by three, and the data would remain the same.

  2. If I use the Skinny Ms Granola recipe 4 smart points of eight 4 one quarter of a cup do I have to count that as an additional points

      You can definitely make these the night before. However I would wait to put the granola on the parfait, it will absorb the moisture overnight and will end up soggy.

  3. It is actually very nice when the granola is ‘soggy’. I always make mine the night before, making it a very fast convenient and healthy breakfast.

    What type of utensil should I use to put the stuff in the jar?
    Does it have to be a glass jar; or will a plastic container do the trick?
    If I substitute coconut with bananas will it be as ap-peel-ing?

    1. Anita, It can be any jar you prefer. If you use plastic, I recommend one that’s BPA free. Yes, coconut is fine, just not as sweet as banana.
