Enter these Broccoli Cheddar Quinoa Cups. They’re delicious snacks that are perfect for bringing with you on the go, and kids will be more than happy to pop one in their mouths when they’re feeling like a snack while you’re out and about. Plus, they’re made with only whole, healthy ingredients. Quinoa provides protein, fiber, and antioxidants, while eggs are a great source of protein, potassium, and healthy fats. Broccoli is a nutrient powerhouse, and full of fiber, keeping you full and energized throughout your day. And we use a small amount of cheddar cheese to add flavor, but not so much that we overwhelm this healthy quinoa recipe with excess fat and calories.

Broccoli Cheddar Quinoa Cups

A cheesy and healthy snack for on-the-go, these cups are made with wholesome ingredients you will be proud to share.

Ingredients

  • 1 cup quinoa cooked
  • 3 eggs
  • 1 cup broccoli finely chopped
  • 1/2 cup cheddar cheese finely chopped or grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • cooking spray

Instructions

  • Preheat the oven to 375 degrees F.
  • In a bowl, mix all the ingredients together.
  • Spray muffin molds with cooking spray then fill up each mold with the quinoa mixture.
  • Bake them in the preheated oven for 30 minutes or until they are cooked through.

  1. This says it makes 6 cups and a serving is 1 cup, but the text of the recipe says to spray 10 muffin cups…? Which is correct?

  2. I made then today with my kids… delicious!!!! Seriously! Really yummy. I will be making these on a regular basis. I chopped the broccoli and cheese (separately) in a food processor so it was very quick and easy to prepare. Thanks for the great recipe!

    1. Deb, That may work, but we are not sure as we haven’t tested it. Rice is a bit heavier. If you try it, do let us know how it goes.

    1. Wendy, Yes, they can be appetizers. Hot or cold will depend on your preference. For me, they’ve got to be at least warm. 🙂

    1. Great questions, Melissa! You can make these ahead to freeze and reheat. I suggest slightly under cookie the Broccoli Cheddar Quinoa Cups before freezing and reheat using your desired method (oven or microwave) until hot and cooked through.
