This completely vegetarian burger incorporates the best seasonings, veggies, and legumes. The dense burger patty combines chickpeas, potatoes, oats, onions, carrots, and a few spices in a food processor. That’s it! They’re high in nutrition while low in ingredients that set your diet back. Simply pop them into the oven for a crisp, satisfying burger without all the deep-frying. The homemade buffalo Ranch sauce uses high-protein Greek yogurt for even more nutritious flavor. Plus, you can complete the nutritious meal with these yummy Asparagus Fries!

Buffalo Ranch Chickpea Burger

This fantastic vegetarian burger is just what you need for a family dinner.

Ingredients

For the Burger

  • 15 ounces chickpeas can, drained and rinsed
  • 1 potato medium, peeled and cooked
  • 1/2 cup rolled oats
  • 1/4 cup yellow onion diced small
  • 1/4 cup carrots shredded
  • 1/2 cup buffalo hot sauce more or less depending on spice tolerance
  • 1 tablespoon parsley fresh, chopped
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon kosher salt

For the Buffalo Ranch

  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried chives
  • 1/2 teaspoon kosher salt
  • 2 tablespoons mayonnaise
  • 1/4 cup Greek yogurt plain
  • 3 tablespoons buffalo sauce more or less depending on spice tolerance

Instructions

For the Burger

  • Preheat oven to 400 degrees. Lightly spray a baking sheet with nonstick spray and set aside.
  • Combine all ingredients in a food processor. Blend on high until and mix until well combined but not mushy. Form into two equal sized patties.
  • Place on prepared baking sheet and bake for about 8 minutes. Remove and flip the burgers. Return to the oven and bake and additional 8 minutes.
  • Once cooked, serve on a whole wheat burger bun with ranch sauce and our favorite burger toppings!

For the Buffalo Ranch

  • Combine all ingredients together and whisk well. Serve 1 tablespoon on top of chickpea burger.

Notes

TIP: This burger tastes great with a few tablespoons of your favorite guacamole or sliced avocado!
