Date Butter Spread
Instructions
- Add dates to a medium stainless steel bowl. Bring water to a boil, pour over dates, then tightly cover with foil or a lid. Allow to sit covered at room temperature for 4 hours.
- Add softened dates and water to a food processor and pulse until a smooth, butter-like consistency. It may take a few minutes of pulsing until the butter consistency is achieved. It should look similar to apple butter.
- Store in a glass container (a mason jar works well) and refrigerate.

Is it possible to speed the softening by using the microwave?
Yes, but you don’t want to leave them in there so long that they start cooking–just long enough to soften them
I tried this today. The flavor is very good, and I’m looking forward to using it. I would like to suggest that you make sure the dates don’t have any occasional pits though! Mine were pitted, but apparently one escaped detection in processing.

Jz,You can purchase several butter substitutes that will work, for example, Earth Balance, I Can’t Believe it’s not Butter (Vegan), Miyoko’s Creamery. etc..
