This recipe is perfect to have in your back pocket for any occasion. It’s chock full of nutrients, and it’s perfect for detoxing. Surprisingly, unlike other detox soups I’ve had, this soup is comforting and tastes great!

Flush The Fat Away Vegetable Soup

This comforting soup is loaded with nutrient-rich ingredients that will detoxify and satisfy your body!

Ingredients

  • 1 sweet potato medium, peeled and cut into 1 inch cubes
  • 3 carrots large, peeled and sliced
  • 1 celery stalk diced
  • 1 yellow onion small, diced
  • 1 garlic clove minced
  • pinch of kosher or sea salt more or less to taste
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon allspice
  • 1 teaspoon paprika
  • 1 bay leaf
  • 30 ounces navy beans cans, drained and rinsed (optional black beans)
  • 4 cups vegetable broth low-sodium
  • 14 1/2 ounces diced tomatoes can, no salt added, *this is an optional ingredient
  • 4 cups baby spinach loosely packed (optional 2 zucchini, sliced)
  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil optional, for serving (1/2 teaspoon per serving)

Instructions

  • Add all ingredients, except spinach and olive oil, to the slow cooker. Cover and cook on low 6 to 8 hours, or until the vegetables are tender. Add spinach, stir and continue cooking just until wilted, approximately 5 minutes. Serve and enjoy! (1 serving per night if doing the 3 Day Cleanse & Detox)
  • Tip: If you prefer a thicker soup, after 5 hours of cooking, simply remove 1 cup of soup, along with ingredients, mash ingredients with a fork, return to the slow cooker, stir and continue cooking 1 to 3 hours. When serving, drizzle a little (optional) olive oil over each bowl of soup.
  • Note: Olive oil helps the body absorb nutrients more efficiently and supports a healthy digestive system.
  • Stovetop Method: Follow the same instructions above for prep, cover, and simmer until veggies are tender, approximately 2 hours. Stir every 15 minutes to prevent sticking. Add spinach at the end of cooking time, remove from heat, cover and allow spinach to wilt before serving.

  1. making this now. What is the nutrional info, calories, etc…? Does this fill you us with just a cup?

    1. Remember the idea is not to get filled up, but rather satisfied. 1 cups = approximately 150 calories.

  2. Im sorry i made this today..is there suppose to be stock in it cause it was horrible ..where did i go wrong i keep reading the ingredients and i did it to the letter and it had no taste at all is there a bit missing ?

      1. I am wondering what you did wrong because I think it tastes great, and everyone I told about it says the same thing – they love it! You mentioned broth, I use a good quality low sodium vegetable broth, and some additional spices if needed. Have lost weight and feel great too!

          These are approximate times.

          Cook for 5 minutes on Pressure Cook. Once the cook time is over, let pressure release for 10 minutes before opening the valve.
          Remove the lid and add the spinach.

    1. It basically has everything that you need to make vegetable stock, which is more tasty than chicken stock in my opinion. Maybe you just need to add some salt? or hot sauce?

    2. Interesting comments. I am also looking over the ingredients and wonder, its probably the vegetable stock. I never used that type in my soup. I always use chicken or been. that's just me. I am also thinking, it these are on slow cook for 5 to 8 hours, the vegetables are overcooked no?       1. Hello, I’m confused about the servings. Should I eat half of what the finished recipe yields so I can “save some for tomorrow”? I don’t want to over eat! Or do I eat the recommended serving size which will leave plenty of food to throw out since some recipes yield 8 servings :/

        1. Roxana, You want need to throw anything out, especially the soup. This soup is perfect for freezing and enjoying later. 🙂

    1. You can just leave it out. If you have access to Chayote, a Mexican vegetable. that's a good substitute for zucchini. You can also add chopped cucumber right before serving. Otherwise, just omit it.

  4. Wow, I made the soup last night and couldn't eat it because it was so hot because of the pepper – I guess that is a LOT of pepper and I just couldn't handle it! My husband tried it and he could barely eat it and he loves hot and spicy! I guess I'm a wimp LOL Will make it again with much less pepper 😉

  8. What the heck I have done this detox before and loved it but it has changed. The soup is different and the ingredients aren't on the shopping list. I just spent 60$ on food and I don't have everything I need to make the soup. I'm pretty upset cause now I have to go back to the grocery store if I want to make that veggie soup.

        1. Carole, The only difference is the recipe had only 2 cups veggie broth instead of 4. We later changed it
          because our audience preferred a less thick soup. Also, the recipe did not list evoo when the recipe first published
          in 2013. Feel free to omit the evoo, however, it is so healthy and adds a lot to the recipe. That’s it! 🙂

        2. I’m making this now I sauteed the vegetables a little before adding the broth, tomatoes and beans. I also added 3 mini sweet peppers to it and used poultry seasoning, less pepper and a little regular salt. I’m cooking it on the stove and it smells amazing already.

  10. This is DELISH!!!! My 15 year old son made it for us to begin our detox. Gotta say – pretty proud of the kid. I was scared at first. I was grumpy all day thinking about how I'd get through 3 days of detoxing. But I walked in the door, smelled this heavenly aroma, and it was a FABULOUS soup! One of my top 3 favorites for all time now.

          1. I made the soup on Sunday. I blended it and Yum.! It’s filling and I’ve already lost 2kg. I have a protein shake for breakfast and the soup for lunch and dinner. I enjoy the texture better it feels like a nice thick soup, just roughly blended.

  11. can you the soup everyday? and should you follow a regular diet with this soup, it doesn't give much information, I love veggies, I will have no problem eating this soup, I just need to know if it is like the cabbage diet where you eat it 3 times a day?

    1. Deanna, Keep in mind this is not a diet. This is for 3 days only and is for cleansing and beginning a clean eating plan.

      1. Can I just clarify something when it comes to the measurements of the ingredients please? I’m based in the UK and maybe not so clued up with the US terminology.   14. Hi, i am busy writing out the shopping list could you give advice on what i can use instead of Zucchini ?? i can not buy this in my supermarket (asda)…also what is a Cilantro? thanks

    1. Cilantro is an herb that looks like parsley, and has a fresh, bright flavor that pairs well with lime. It's often used in Latin American and Asian cooking. Parsley is a good substitute here, or fresh mint leaves. Add chopped cucumber to the soup at the end to replace the zucchini.

  15. I am not a fan of Black Beans. I know the beans can be left out but is there an alternative bean or beans to the Black Beans?

    1. Any beans, such as Northern, pinto, kidney, or white beans will work. If you don't want to use beans, any lentils will work as well.

    1. Carrots could certainly work in place of the sweet potato. Yes feel free to substitute any of the vegetables for other vegetables.

  16. How come mine looks so much darker? Mine looks more like black bean soup than what the photo looks like. I don't eat a lot of those ingredients and I really like this soup.

  17. I just put this soup together in the crock pot and added the 2 cups of broth but it's not soupy at all. I can barely see the liquid. Did I do something wrong or does it get more soupy with cooking?

    1. It gets more soupy with cooking because of the water in the vegetables and the steam the slow cooker creates. Thanks for checking!

  18. I was wondering does this really only needs 2 cups of broth? Other recipes for similar soups called for at least 6 in a slower cooker.

    1. Yes, it's 2 cups, but check halfway through cook time and add more broth or water if a more liquid is desired in the soup.

  22. What about using butternut squash instead of a sweet potato or zucchini and swiss chard instead of spinach? Will the soup still have its fat flushing properties?

    1. What is butternut squash? In Australia, we have butternut pumpkin, sweeter than some other pumpkins. Squash over here is a small round but flattened veggie yellow or green in couloir and similar flavour and firmer texture than it's family member zucchini.. My point is pumpkin is usually a no no in dieting for some reason. I am happy of it's inclusion though, as it is a favourite of mine.

    1. If it's baby kale, add at the same time. If it's full grown kale, add bite-sized torn pieces with the rib/stalk removed 1/2 an hour prior. Enjoy:)

  24. I've made the soup twice now and love it, but it doesn't look anything like the picture. Is that a different soup? The soup pictured looks like it has noodles and some oil on the top. Just curious, I follow the cooking directions exactly.

    1. Yes, there are different variations on the soup, such as subbing lentils for beans, or switching out some of the veggies, so that may be what you're seeing. Glad you love it:)!

  25. I made it exactly as directed and didn't like the taste at all. I'm guessing it was the allspice. What other ingredients can I use instead.

    1. You can omit the allspice. You can add 2 teaspoons Italian herb blend (the blend with oregano and basil) or thyme or oregano or basil or a mix of all 3.

  26. i made this yesterday and it was fantastic! BUT it did not look like the picture you have? the picture looks like maybe there is some olive oil in it???

  27. I've made this a half dozen times now and it's my favorite soup ever. I make a few minor changes as follows: 1) I use a dutch oven on the stove top. 2) I use both the zucchini and the sweet potato. 3) I use a full 32 oz. carton of veggie broth. 4) I double the paprika.

    I toss the veggies into the dutch oven as I cut them so they get a quick saute, add everything else except the spinach and then cook it for an hour or two until the veggies are just tender. Add the spinach at the end as instructed. It's basically a Minestrone without the pasta. Even my meat loving (and sweet potato hating) husband loves it. SO HEALTHY AND DELICIOUS.

  29. I just made this soup & it was done in time for lunch! It is amazing! I will add the spinach next time I heat up the rest. Without it it was wonderful! I used the spices called for but also heated it up with a dash of Lucifer Spice (great new spicy spice). This is a keeper!!!!

  30. What happens when you eat zucchini? My mother always said she was allergic to onion when in reality she just did not like it! We, the family tested her on this many times and she was fine, she never knew but the funny thing was she made all her favourite salads with spring onions……hello, they are still onions mum!

  31. The only black beans I know are Asian, is this what the recipe calls for? If not do they have another name and do I purchase them at a specialty store or just a supermarket? I am in Australia, not the USA.

    1. You might know them as navy beans. You can also substitute kidney beans or white beans. Really, any type of beans will work in the soup. Enjoy!

    1. You can replace the zucchini with another vegetable or omit it altogether. Water chestnuts would be a fine replacement, if you like those.

  34. Are the tomatoes necessary? Not a fan of cooked chunky tomatoes. Can I use a tomato sauce or paste instead?

    1. Yes, you can add a little tomato puree. We prefer the cardboard carton to cans, or a touch of tomato paste from the tube. Even sundried tomato paste would work nicely for a bit of tomato flavor.

  38. Why is there so much floating oil on top of the soup? "The fat you eat is the fat you wear", per Dr John McDougall, but I see there is no added fat in the recipe?

    1. Jessica, That is just a swirl of olive oil added on the top for the image and is not in the recipe. There are many fats that are very good for you, such as the fats found in olives, coconuts, salmon, avocados and more. Refined sugar and refined carbs actually turn to fat in the body.

  39. This was delicious! I used vegetable stock, not broth, and 4 cups not 2. I also added some frozen green beans and frozen corn. Did this on the stovetop and cooked it on medium/medium low for about 1- 1 1/2 hrs. So good! (Also, used sweet potatoes not zucchini. Added some sweetness to the recipe along with the sweetness from the carrots. I think zucchini might get mushy.)

    1. Lisa, I would omit the tomatoes and any of the other ingredients that the doctor say you can't have. You can always add in other vegetables that are safe for you.

  40. Could you make a suggestion as to what to eat in the mornings for a night worker. I find it very hard to keep to a diet as do some of my co-workers. Suggestions welcome

  43. I tried this for the first time last week & my husband & I both thought it was so amazing that I have this week's batch cooking as we speak. I love sweet potatoes so I did two sweet potatoes instead of one & three stalks of celery diced. I also added two servings of portabello mushrooms to this batch which I didn't do last time so we'll see if that helps make it more hearty.         1. Hi Cathy, yes – you can make this in a pressure cooker. If you’re using an Instant Pot, about 15 minutes on high pressure should do the trick!

  53. Should I add all the spinach or just enough for what I am going to eat at the time? Does that make sense? Won't it get wilted if I put it all in at once and then don't eat it again until the next day?

    1. Jon, Yes you could do that if you like. We can’t promise it will taste as wonderful as the soup. 🙂

  55. Started the three Day Detox today, I made the soup in a pot rather than slow cooker but there is some flavoring that I don’t care for in the soup. Can it be the allspice, paprika or the black beans?

    1. More than likely the allspice since it’s somewhat potent. I love it but it’s fine to leave out, if you like.

  56. Starting this today for 5 days .. while I know this is a cleanse, what on average can you expect as far as weight loss. I’m religious about working out, eat fairly well, but for 2016 wanted to begin a ‘cleaner’ eating pattern and thought this was a great start. Your website is great BTW, glad I came across it.

  60. I read a bunch of reviews where people said this soup was bland or not good. I thought it was DELICIOUS! I made it in my pressure cooker and my whole apt smells amazing. I didn’t have allspice or bayleaf so I added a mix of oregano, basil, and rosemary. I also added turmeric. I can’t eat beans so I bought extra firm cubed tofu, cut it a little smaller than the cubes, and added that. I planned on cheating tomorrow night for a date night with the husband (I thought I was going to be miserable eating this soup anyway) but I asked him if we could reschedule because I actually WANT to eat this for dinner tomorrow!   62. I first tried this soup and diet 3 years ago. I felt so great that I continued it for 3 more months. Besides losing weight, the symptoms of Rheumatoid Arthritis were reduced by about 90%. I missed grains and ate a slice of Ezekial bread. My symptoms returned. That’s when I realized the link between gluten and RA. I continue to follow this diet for months at a time, varying the juice in the morning and occassionally a curried red lentil/quinoa soup instead of the black bean/sweet potato soup. This is one of the most beneficial sites I have ever found.

  64. I used low sodium organic chicken bone broth, added tumeric and rosemary and the zucchini and spinach. Cooked on stove for 1 hour and 20 min (when veggies were tender). Didn’t have paprika so used cayenne pepper. Tastes great! I think this is a great alternative to the cabbage soup cause i don’t like cabbage. And added a can of no salt diced tomatoes.

    1. You can add chicken, Shonda, but to keep the soup as lean as possible, use skinless white meat.

  69. Followed the recipe with diced tomatoes and only 1 tablespoon of light olive oil. Couldn’t find canned navy beans so used mixed beans. The soup tasted awesome- love the taste of sweet potatoe.   73. I made this soup for my family this week and it was a huge success. My 8 year old daughter, who tries to avoid her veggies like they were the plague, absolutely loved it. My wife did as well. I added some cooked chicken to it but followed the rest of the recipe to the letter and it came out great. Thanks so much for making this recipe available.   74. Made this soup on Monday night, with the following adjustments simply because I didn’t have everything listed here in my cupboard 😀

    1. Replaced sweet potato with butternut pumpkin
    2. Replaced navy beans with lentils
    3. Replaced vegetable stock with beef stock

    Regardless of these three changes, this soup is GORGEOUSLY tasty. I maybe went overboard and dumped in about 6 bay leaves (let’s be honest, who uses ONE bay leaf?) because they were all crumbly and broken in the tin anyway and I needed to use them up, and I also wasn’t sure which version of Paprika one was meant to use, so I used Smoked and Sweet.

    End result?
    Oh. My. Giddy. AUNT.

    Recipe says 8 servings. After eating spoonfuls STRAIGHT out of my Instant Pot, I was left with 6, max.

    SO. SO. SO. GOOD.

    Seriously. I am a hardcore carnivore. Hard. Core. I eat my steak blue. BLUE, people. And yet, I’m in love.

    Considering half the people here are behaving like miserly little hypochondriacs and saying “it’s too bland” or “it’s too X” or “it’s too Y” – I was skeptical, but I think that’s just the usual typical American response to Eating Real Food (a la something that looks like the thing it was when it was alive, NOT when you took it out of the box). Because this soup is flavourful, wholesome, satiating, and savoury. PACKED with umami. STUFFED with chewy-bits. I’m in love. I’m going to make this again next week, but this time I’m also going to roast a few turkey drumsticks and shred the meat into the soup so I can feed my spouse, who is almost as much of a hardcore carnivore as I am.

    I needed this, for body and mind. It’s teaching me to eat properly again, and I’m very grateful for that. Deliciously, deliciously grateful. 😀

Didn’t have time to cook on the stove top and no longer have a slow cooker so I adjusted the recipe for the Instant pot and it came out DELICIOUS! added a tsp of oil in the instant pot on saute mode and added sweet potato chunks cooked until browned. Add everything but the rest of the oil and spinach, cooked on high for 6 minutes with a Quick release. Added oil and spinach stirred until wilted and severed, it was AMAZING so much flavor and yummy.5 stars

  89. I love this recipe! I used sweet potatoes from my garden and pulled some dandelion leaves in lieu of the spinach and also threw in an apple that was past its prime chunked up I am doing the recipe again today using kale and still including apple.

  90. I’m rating this based on my tweaks:

    I did both zucchini and spinach, plus added a sweet pepper to have extra vegetables.
    Added some miso paste (up to ½cup to 4cups stock). I personally think this already meshes better than the allspice, and the only other seasonings I added were chili flakes and fennel seeds (which I don’t think I added enough to taste those elements) .

    This made 20 cups which per cup of soup, this is still less than 90cals (and fits my low carb eating to boot). I felt satisfied after eating 4 cups (approx 350cals). Good with sour cream as an option. Would make again.4 stars

      This is recipe is only a tiny portion of what is needed to lose belly fat. Consider following a healthy diet, do cardio on a regular basis, and get around 8 hours of sleep each night. When someone loses fat it isn’t in one area alone, but rather all over. Hope this helps.
