Ingredients
- 1 cup dates (no added sweeteners)
- 1/2 cup raw almonds
- 1/2 cup raw walnuts
- 1/4 cup cocoa, good quality
- 1 tsp. pure vanilla extract
- 1/2 tsp water
- 1 tbsp cocoa (optional)
Directions
In a food processor combine walnuts ad almonds and pulse to a crumb like consistency...being sure to leave some course pieces for texture.
Remove nuts and place in a medium bowl.
Combine crumbed nuts with cocoa and vanilla, mix with a large spoon.
Add dates to the food processor and pulse several times until they are a gooey consistency.
This is very important...must be very gooey, as in a ball of goo.
Add to nut mixture along with vanilla and water.
You will need to use your hands to knead the mixture until there is one large ball...this will take a few minutes.
Shape into 1-2 inch truffles as seen in photo.
Combine additional cocoa and sprinkle on half of the truffles (optional) if you prefer, shape into small bars instead of truffles.
Cover and refrigerate. Enjoy!

I made these yesterday and they are wonderful!! I will tell you, though, think it depends on they type of dates you use as to how much water to put in. Seems the dates I bought were dry and the 1/2 cup of water was a bit to much…..BUT , I got it to work. Had to put part of the water as the dates were in the food processor. I can't seem to find the nice gooey/chewy dates. Think those would work best. Am on the look-out for those.
This recipe is a keeper for sure and I did share it with my friends.

These look amazing! Do you know the fiber content? I'm trying to figure out WW points+ but I need fiber. I asked this on FB too so if you answer there you don't have to answer here. Thanks!
2 g dietary fiber
what if I detest walnuts? what should I substitute them with? Would double the almonds work?
dsowers, Double the walnuts will work fine. You can also use peanuts or cashews.
Macadamia nuts! Pecans…
Dont have vanilla bean, can I use imitation vanilla, if so how much? Thanks
Tania, Yes, use 1 teaspoon vanilla.
