This healthy salad recipe highlights the delicious taste of fresh, juicy heirloom tomatoes. It is accented with fresh herbs and is one of our favorite garden fresh summer recipes. Even the most stringent vegetable hater will love this fresh salad. Heirloom tomatoes are bursting with flavor and health benefits. The herbs added to this salad even help to mask the “grassy” taste many people associate with eating fresh veggies. Some compare the taste of this salad to a fresh pizza, but it is much lighter and has far fewer calories and less fat than any pizza we’ve ever seen. It pairs well with a variety of different meals or can be eaten on its own for lunch. We love it with a chunk of our healthy cornbread.

- 2 pounds heirloom tomatoes, variety of shapes and colors
- 2 cups chopped arugula
- 1 small Vidalia or sweet onion, thinly sliced
- 1 coarsely chopped tablespoon each: fresh basil, mint, oregano, and thyme
- Sea salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 2 tablespoons feta cheese crumbles
Slice tomatoes, and place in a serving dish over arugula and onion. Sprinkle fresh herbs over tomatoes; salt and pepper to taste. Drizzle oil and vinegar over tomatoes; add feta crumbles.
