- 2 pounds heirloom tomatoes, variety of shapes and colors
- 2 cups chopped arugula
- 1 small Vidalia or sweet onion, thinly sliced
- 1 coarsely chopped tablespoon each: fresh basil, mint, oregano, and thyme
- Sea salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 2 tablespoons feta cheese crumbles
Slice tomatoes, and place in a serving dish over arugula and onion. Sprinkle fresh herbs over tomatoes; salt and pepper to taste. Drizzle oil and vinegar over tomatoes; add feta crumbles.
