Eat Your Veggies Challenge!

Do this challenge and get the veggies you need.

Welcome to the Skinny Ms Eat Your Veggies Challenge!

For this month, we will be challenging you to:

~ Eat 2 cups of veggies before EVERY meal (yes, that includes breakfast, though adding the veggies to a breakfast smoothie is entirely acceptable.)
~ Exercise 30 minutes minimum daily (1 day of rest is fine)
~ Drink 8 glasses of water per day

Note: Fruit may not REPLACE the required veggies, but you can have as much as you like in addition to them. For breakfast, you can incorporate the veggies into a smoothie or omelet or other type of meal. But for lunch and dinner, the veggies must be eaten before the rest of the meal.

  1. I'm going to do my very best!!!! The veggies before breakfast will be tough, but I'll have to add them to my eggs or shakes!

  3. I'm in! Good thing I just starting making green smoothies! Those and omelets with a lot of veggies are going to be some staples for the next month for breakfast!

  4. I am in!!!! But yeah, the veggies BEFORE breakfast is a little scary….can I add them to an omelet??? 😉

  6. I'm in.  I really like the idea of put veggies into a smoothie (being that I'm not such a huge veggie eater)

  7. I put veggies in my smoothies, and I love it!!! Here is a recipe I use, it is a green smoothie:
    About 1/2 cup of water (enough to get the blending started)1 Banana1 small hass avocado (you can use half if you want)1 Kiwi1/2 cup pineapple chunks1 cup baby spinach1 scoop of vanilla soy protein (optional)As much ice as you want, I put in about two handfuls of ice

    You can also put in broccoli or carrots in smoothies too. You just have to do some trial and error, but a lot of smoothies I make I really can't taste the veggies I put in them. If you find that a smoothie might not be sweet enough use pineapple or pineapple juice to help sweeten it. 

  8. This is the challenge for me. I am horrible at eating veggies cuz there are so few i can actually tolerate (ei. taste, or actually how my body can tolerate them)

    1. Prettyinblack, that's why it's called a challenge. Lol. You can always juice or blend the veggies. That counts too. Add in an apple to sweeten it up a bit.

  9. Geez, thank you sooo much for that smoothie idea! I have a very low tolerance for just fruit on an empty stomach (hypoglycemic), so I have to have protein prior to sugar, even fruit. Smoothies are so super easy and have always wanted a recipe like this!! Post more if you have them!

I'm in although I'm not sure I can meet the 2 cups of veggies before breakfast challenge… will have to get creative when I make out my grocery list…and the eight cups of water per day will be tough unless it includes tea and coffee…30 min. exercise per day is no problem. Hey…I'm willing to give it a try!!!

    1. Madeline, Great! This challenge isn’t an actual plan, as in sign up. It’s more of an informational challenge that many people have found helpful over the years. Enjoy!
