This marinated tomato salad is a near-perfect dish for summer, but excellent any other time of the year, too. It showcases the fresh taste of ripe tomatoes and other veggies, and it packed with bright flavor. The salad is ideal as a summer side dish, a pitch-in dish at a party, and even as a salsa with your favorite burgers and wraps.

Marinated Tomato Salad

Yields: 4 servings | Serving Size: 3/4 cup |Calories: 80 | Previous Points: 1 | Points Plus:2 | Total Fat:0.5 g | Saturated Fat: 0 g | Trans Fat: 0 g | Cholesterol: 0 mg | Sodium: 12 mg | Carbohydrates: 17.7 g | Dietary Fiber: 4.1 g | Sugars: 12.7 g | Protein: 2.5 g |


  • 6 medium tomatoes, diced
  • 1/2 cup chopped green scallions
  • 1/2 cup chopped green bell peppers (optional)
  • 1/2 cup chopped onion
  • 1 tablespoon honey
  • 2 tablespoons vinegar


Combine vegetables; sprinkle with honey and salt and pepper to taste. Add vinegar and stir.

Allow to sit 2 hours in the fridge before serving.
