Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup onion chopped
  • 2 garlic cloves minced
  • 2 1/2 cups Greek yogurt non-fat or low-fat, plain
  • 1/4 cup cream cheese low-fat
  • 1/4 cup parmesan cheese grated, divided
  • 1/2 cup mozzarella part-skim, shredded
  • 1/4 teaspoon kosher or sea salt
  • 1/8 teaspoon black pepper
  • 14 ounces artichoke hearts can, drained and chopped
  • 3 slices whole-wheat bread cut into small crouton-sized squares

Instructions

  • Heat olive oil in a skillet over medium heat, add onions and sauté for 5 minutes until softened and translucent. Add garlic and cook for an additional 30 seconds.
  • Stir in yogurt, cream cheese, half of the parmesan, mozzarella, salt, and pepper. Stir in the chopped artichoke hearts and bread cubes. Sprinkle with remaining parmesan cheese.
  • Spread into a small baking dish and place under broiler for 2 minutes until golden brown on the top.
  • Serve warm and enjoy!
