If you have been eating clean for a while, you might be missing cake. This paleo pound cake allows you to get your cake fix while you're eating clean!

In the mood for delicious cake, but you know it’s a no-no if you are dieting or eating healthy? Enter our paleo pound cake recipe. It is moist and delicious, but it contains none of the unappealing ingredients you might find in pound cakes that are store bought or made with traditional recipes. This means you can actually have your cake and eat it too!

Do you have a sweet tooth? Are you trying to lose weight? As any dieters knows, this combination can be lethal. The first foods you cut out when you decide to lose weight are high-calorie sweets. The refined sugar is a diet saboteur, but after a few days (or for some people, a few hours!) you get a craving for something sweet. You might be able to ignore your craving for awhile, but eventually, it takes over and you binge on sweets, causing more damage than necessary.

Paleo Pound Cake

Satisfy your sweet tooth with this healthier version of pound cake that will keep that smile on your face.

Ingredients

  • 6 eggs
  • 1 cup coconut milk canned is best... lite or whole will work
  • 1/3 cup honey
  • 2 teaspoons vanilla extract
  • 1 teaspoon orange extract
  • 1 cup coconut flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon sea salt

Optional Toppings

  • 1/4 cup strawberries sliced
  • 1/4 cup blackberries

Instructions

  • Preheat oven to 350.
  • Grease a loaf dish or pan very thoroughly, lightly flour as well (I used coconut flour).
  • Beat eggs until smooth.
  • Add remaining liquid ingredients and mix.
  • Add dry ingredients and mix until smooth. Some people have problems with coconut flour clumping and claim they must sift it. I personally have not yet found this to be an issue and usually opt not to do this step.
  • Bake. The original recipe called for 45 minutes. I found mine actually took almost a full hour to cook through the middle. Just start checking around 45 minutes every few minutes. Insert a toothpick and when it comes out done, you’re golden…

For Berry Component:

  • Slice up strawberries into whatever size you like.
  • Puree some of them for a sauce.
  • Wash the blackberries.
  • Assemble your shortcakes in whatever way suits your palette. The cake is quite dense so I chose thin slices.
  • If you “do dairy” a little homemade whipped cream on this would be awesome.
  • The end result was quite tasty and the perfect bed for beautiful fresh berries and a little puree for the sauce.

  1. This was delicious and even better the next day. It was good by itself, with fresh fruit and with Paleo jam. I'll make it again for sure!

  2. I made this for Labor Day and I didn't have orange extract so I added about a cap full of orange juice and had orange flavored honey so I just used that as my honey amount. It came out so good. My sister doesn't like coconut but she ate it and wants to make this as a french toast sticks for breakfast for her and my nephew. Will be making again soon. 🙂

  3. Hi: We tried this recipe but it came out really dry. Any ideas on what went wrong? We followed the recipe exactly as you listed but we think part of the problem is we may have baked it too long (45 minutes but we have a brand new oven). The taste is great though so we would love to bake it again if we can get it to come out moist 🙂 Oh and we didn't make the berry compote.

    1. I would recommend making it again after you become more familiar with your oven’s temperature. Ovens tend to bake a little differently.

  4. I made this yesterday and it turned out yummy!!! I did also add 1/4 tsp coconut extract. In my oven it took just under 45 minutes to bake… It came out super moist. 🙂
