Papaya Boat Parfait
Ingredients
- 1 whole papaya
- 1 cup Greek yogurt plain
- 2 teaspoons honey
- 2 tablespoons pomegranate seeds
- 1 kiwi peeled and cut into small chunks
- 1/2 teaspoon chia seeds
- 2 tablespoons almonds slivered
Instructions
- Leaving the peel on, cut the papaya fruit in half lengthwise. Scoop out the seeds and pulp from the center to make a boat.
- Divide the Greek yogurt between the two papaya boats, placing the yogurt in the hollowed-out center of the papaya. Drizzle each with the honey and top with pomegranate seeds, kiwi, chia, and almonds; dividing evenly between each boat. Serve and enjoy!
