Peanut Butter and Honey Oat Bars
Ingredients
- 1/2 cup honey
- 1 tablespoon coconut oil
- 1/3 cup peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon ground
- 2 cups oats
- 1/2 cup honey roasted peanuts chopped
Instructions
- Preheat oven to 300 F.
- Line an 8 x 8 pan with parchment paper, making sure the parchment paper hangs over the sides.
- In a microwave-safe bowl, add honey, coconut oil and peanut butter. Microwave for 30 seconds, stir until mixture gets runny and peanut butter completely melted in. You may have to heat for another 20 seconds or so. Mix in vanilla extract and cinnamon.
- Add oats and peanuts, mix until everything is combined and the mixture is completely coated with honey and peanut butter mixture.
- Pour mixture into prepared pan and press down with a back of a spoon; bake in the oven for 20 -25 minutes until lightly brown.
- Once you take the bars out of the oven, press down with the back of a spoon to ensure the oats are pressed firmly together. Let the oat bars cool slightly and carefully take out bars by grabbing onto the parchment paper and cut into 16 slices. Let bars cool completely and harden at room temperature.
- Store bars in an airtight container in the refrigerator.
- Makes 16 bars.

Just made the bars for the morning, I snagged a crumb and they are very tasty. I used half honey, half agave. I am trying to change my obese lifestyle, also started the 7 day arm workout. Cutting the bars, i felt like they were a little small, maybe it is just my adjustment to a reasonable serving size?
You’re right…it’s all about portion control and learning to eat smaller portions. 🙂
What can you use to replace the coconut oil

How long will these stay good in the fridge? Will they melt if they are out of the fridge for a couple hours, say in a preschooler's backpack until snack time?
Johanna, They should be fine for a few hours…unless it’s in a really hot climate. Since your preschooler will likely be indoors most of the time, it should be fine.
What kind of oats are best to use? We don't have/use gluten free ones.
Julie, In that case, I would use old-fashioned oats…not the quick kind. I use rolled oats for a lot of recipes, even unbaked ones.

Do I have to adjust the recipe at all if I just dont put in the chopped nuts? My kids love peanut butter, but wont touch nuts with a 10-foot pole. 🤦 Wanting to make these to store for snacks.
You can leave out the nuts, if your mixture is looking a little loose you can add a bit more oats as needed.
How long do they keep for in the fridge?

Do these have to be refrigerated? I was trying to find something to send with somebody back packing/hiking. I guess I don't see what is in them that would require refrigeration.

Just wondering how it would be without the peanuts. I have two toddlers and they are always after my granola bars but I put nuts in them and they dont have enough teeth yet.
Yes, you could easily make this without the nuts and just use the peanut butter. You don't need to substitute or add more of anything if you omit the nuts.
Are these going to be hard or chewy?
Kacey, They will be chewy.
If I don't use honey roasted peanuts (not available here) should I increase the amount of honey? These look wonderful and I especially like the fact that no flour is used, just oats!
Rena, Yes, increase the amount of honey slightly, by about one tablespoon or so.
you probably shouldn't use honey roasted peanuts anyway because most are roasted with unnecessary fatty oils…..
these are soooooo yummy! my 15 mos old and I love them 🙂 we left out the actual peanuts though

How long will the bars keep? Should I put them in the refrigerator? Can I freeze them?
If stored in an air-tight container in the refrigerator, the bars will keep for up to a week. Yes, you can freeze them to increase storage time.
Can I use PB2. In this recipe? Are there any other adjustments that would need to be made?
Yes, you can use PB2. You may need to add some water to the mixture, however.

I made these a couple days ago and they turned out really well! The only ingredient that needs to be added is some salt. But that might be because I used natural peanut butter. However I didn’t realize that til I’d already made them.
We use natural peanut butter, as well, Rena. Adding a little sea salt, to taste, or natural peanut butter with salt added would be fine.
I noticed that there are two places that lists the calories and other information and they are different; one is above the recipe like usual and the other is right at the bottom…can you tell me which one is correct?

Although the amount of honey here is not large, overall it is best not to microwave honey as its beneficial properties are thus negated. Recipe sounds great 🙂
