Red Cabbage and Apple Slaw

Ingredients
- 3 cups shredded red cabbage
- 1 cup coarsely chopped red cabbage
- 2 Organic Rome apples, cored, cut into 1” cubes, leave peeling on apples
- ¼ cup white balsamic vinegar, or juice from one lemon
- 2 tablespoons extra virgin olive oil
- 2 teaspoons honey
- Sea salt and black pepper to taste
Directions
Add cabbage and apple cubes to a large salad bowl, toss to combine. In a medium bowl or blender, combine vinegar, oil and honey. Salt and pepper salad to taste and drizzle with dressing, stir to combine.
