Roasted Broccoli with Red Peppers

Ingredients

  • 1 head broccoli florets
  • 1 red bell pepper stemmed, seeded and cut into strips
  • 2 tablespoons olive oil
  • 2 garlic cloves finely chopped
  • 1/2 teaspoon salt
  • black pepper freshly ground

Instructions

  • Preheat the oven to 400 degrees F.
  • Remove the florets from the head of broccoli. In a large bowl, toss the broccoli florets with the red pepper strips, olive oil, garlic, salt and pepper. Spread in an even single layer on a rimmed baking sheet. Bake for 25 to 30 minutes, until the broccoli has browned at the edges and is tender.

  1. This is so easy and absolutely delish…I drizzle a little bit more olive oil over it. Although it says servings for four, I could easily eat half of it!
