- 3 large boneless, skinless chicken breasts
- 1 cup frozen corn
- 2 cups frozen peas
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups low-sodium chicken stock or broth
- 2 cups water
- 2 cups whole grain noodles (cook according to package instructions)
- 1 cup canned coconut milk
- 1 garlic clove, minced
- 3 teaspoons Kosher salt
- 2 teaspoons black pepper
- 2 tablespoons minced onions
- 1/2 teaspoon dried thyme
Combine everything, but the noodles, in the slow cooker. Cover and cook on high for 4 hours or on for low 6 hours. Remove chicken and shred then return to slow cooker along with the cooked noodles. Heat an additional 5 minutes before serving.
