Ingredients

Meatloaf

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 1 jalapeño minced
  • 1 garlic clove minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup rolled oats coarsely ground in a food processor
  • 1 egg

Glaze

  • 1 cup diced tomatoes in juice
  • 1 garlic clove minced
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 chipotle chili in adobo sauce canned
  • 1/4 teaspoon sea salt

Instructions

  • Heat a skillet over medium heat. Add the olive oil, onions, and jalapeño. Cook until soft and add the garlic. Cook for 1 minute and add to a large bowl. Stir in the beef and seasonings and mix well. When mixture is slightly cool, add the oats and egg. Mix well.
  • Shape the mixture into a round loaf and transfer to a slow cooker pot. Cover and cook on low, for 6 hours.
  • Before serving, make the glaze by combining all of the ingredients in a small saucepan. Bring to a boil, cook for 5 minutes and transfer to a blender. Blend until smooth. Spoon over the meatloaf before serving.

    1. Jennifer, I use extra lean ground beef – or 95% lean and 5% fat. Regular “lean” ground beef would work as well – 90% lean 10% fat.
