- 5 chicken thighs, skinless and boneless (optional, 2 chicken breast)
- 6 cups chicken broth, fat-free
- 1 (14.5 ounce) can coconut milk (full-fat)
- 1 teaspoon sea salt
- 1/2 tespoon black pepper
- 4 teaspoons grated ginger
- 1 teaspoon red curry powder
- 1 (4.5 ounce) can diced jalapeños
- 1 red bell pepper, seeded and diced
- 1 onion, diced
- 3 carrots, sliced
- 1 large potato, cut into small cubes
- Juice of 1 lime
- 1/4 cup freshly chopped cilantro
Add all ingredients, except cilantro, to the slow cooker. Cover and cook on low 6 to 8 hours or high 3 to 4 hours.
When carrots are tender and chicken is done, remove chicken and shred with a fork. Return shredded chicken and half the cilantro to the soup. Stir soup and serve!
Garnish individual servings with the remaining cilantro.
