Turkey loaf is one of those comfort foods that cooks perfectly in the slow cooker. This is a healthier spin on traditional meatloaf and is one of our favorites from our slow cooker recipe collection. Slow Cooker Turkey Loaf

A hearty meal that tastes fabulous and is full of healthy ingredients, this turkey loaf will be a hit with the family.

Ingredients

  • 1 pound lean ground turkey about 93% lean - chicken or ground beef will also work
  • 1  egg slightly beaten
  • 1/2 cup yellow onion diced
  • 1/2 cup red bell pepper diced
  • 1 cup whole grain bread crumbs whole wheat panko will also work
  • kosher salt or sea salt, to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/3 cup tomato or vegetable juice, recommend without refined sugar
  • 1/3 cup ketchup

Instructions

  • In a large bowl combine all the above ingredients, except ketchup, and mix well. Lightly spray the bottom and sides of the slow cooker with nonstick cooking spray. We fill with canola oil or olive oil. Shape mixture into a loaf and place in the slow cooker. You may need to reshape, just a bit, after placing in the slow cooker.
  • Cover and cook on low 5-6 hours. Add ketchup to the top about 30 minutes before the end of cooking time.

Notes

Tip: For simple removal from the slow cooker, tear two pieces of aluminum foil, about 3-4”, fold in half lengthwise and place crisscross underneath the meatloaf prior cooking.
We recommend using atleast a 5 quart slow cooker.

  1. This recipe did not turn out well for me…..when I came home from work it was very dried out after 6 hrs on low.

  2. Very good!!! I used 96/4 Hamburger and added a bit of tomato sauce for moisture. I cooked it on low for 5 hours and it was cooked to perfection and moist! My 13 year old loved it but requested more onions next time! Will make this again for sure!

  3. Anyone know if quinoa can be used instead of bread crumbs or panko? Also, I don't like red pepper (or any type of bell pepper), is there a good substitute?

  5. This was our dinner tonight. My husband and I loved it. I added a little extra Cayenne for him, but was still tame enough for me. He added a little Low Fat Sour Cream….very yummy. Will be making this one over and over again.

  6. I'm trying this tonight for tomorrow's lunch. I did change it up a little by adding Italian Turkey meat and then did jerk sauce instead of bbq sauce and I added in NM hatch peppers 1/4 of a cup for a little sweet heat.

  7. This is a great recipe! Turned out great, I used a small can of V8 instead of tomato sauce, and mine didn't turn out dry. I did cut my veggies a little bigger, which next time, I will chop them smaller 🙂

  8. I made this and it needs some serious work. The only changes I made to the original was to add some fresh garlic and Spicy V8 for the vegetable juice, and it still needs flavor. It has too many bread crumbs for our taste, and it came out very bland. Also, if I were going to leave it in my Crockpot all day, I would put mine on "WARM" until I got home, then switch it to "HIGH" for an hour if it needed crisping up. On "LOW" in my slow cooker for 5 hours caused the outside to begin to burn and dry out. I tried the leftovers today crisped up, and it is still just a bland loaf. I have my go to turkey meatloaf recipe that I will try in the Crockpot, so it gave me that idea. My husband agreed and said, "It's alright but kind of bland…..yours is better."

  9. I made this and it turned out fantastic!!!
    but only used this recipe as a starting point. I made the following alterations to it
    – Added 1 finely diced Jalepeno
    – Added 1 finely diced green and red pepper
    – Used spicy V8 juice instead of the tomato juice (from a fellow commenter)
    – Added some Worcestershire sauce

    It wasn’t tough or dry at all and was FULL of flavor! I cooked it for 5hours on low then came home and smothered it in ketchup and cooked it for 30 min more.
