- 3 medium Russet potatoes, scrubbed
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon sea salt, divided
- 1 (15 ounce) can fire roasted tomatoes, with juices
- 1 (15-ounce) can black beans, rinsed and drained
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 cup reduced-fat cheddar cheese
- 1/4 cup sliced scallions
Preheat oven to 400 degrees F.
Pierce the potatoes with a fork, rub with oil, and sprinkle with salt. Bake for 45-50 minutes, until tender.
Meanwhile, mix the tomatoes, black beans and seasonings in a medium bowl.
