Lettuce wraps are all the rage, and it’s not hard to see why! From the moment we were introduced to the concept of crunchy, green, fun-to-assemble wraps, we were smitten. Instead of loading perfectly healthy ingredients into a starchy wrap filled with empty calories, try these light, low-calorie lettuce wraps instead. This recipe is terrific for those who follow a Paleo diet, anyone who wants to remain gluten-free, or those of you who simply want a low-fat, low-calorie lunch or snack!

We use one egg and one egg white to cut down on excess fat and calories in this dish. The lean protein in eggs make this a satisfying meal that will keep your hunger at bay for hours. And since eggs contain omega-3 fatty acids and essentials nutrients like choline and lutein, they’re one of our favorite superfoods. Add spinach for fiber and even more nutrients, and tomatoes for antioxidant power. Feta cheese adds tangy flavor.

And like many wraps, this recipe is wonderfully simple to prepare. Whisk all of your ingredients in a mixing bowl and then add them to a skillet. Once cooked, load them into your lettuce wraps, and serve! They are perfectly portioned and excellent when serving brunch or appetizers to friends and family, or as a meal or snack when you’re rushing through a busy day. Spinach and Feta Lettuce Wrap

Ingredients

  • 1 egg large
  • 1 egg white large
  • 1/2 cup baby spinach torn into small pieces
  • 2 tablespoons feta crumbles fat-free
  • 1 roma tomato diced
  • pinch of kosher or sea salt
  • 1/4 teaspoon black pepper
  • 1 lettuce leaf large

Instructions

  • Add all ingredients, except lettuce, to a mixing bowl and whisk to combine. Heat nonstick skillet to medium heat, add egg mixture and cook to desired consistency. Add cooked egg to the edge of lettuce leaf and fold over. Best if eaten immediately.

  1. I do not understand how this recipe comes out to 10 weight watcher points. Egg are zero points, 2 T feta cheese is 2 points, everything else is zero points. Unless there is something not listed that is adding the points.
