Grilled Potatoes: Instead of the same old mashed potatoes with every meal, try grilled potatoes. Just cut your favorite organic potatoes into chunks brush with extra virgin olive oil, add onions, thyme, parsley, and put on the grill. You can even add mesquite wood chips to give them a smokey flavor!

 

Sweet Potato Cakes: This is a great way to transform those spuds from duds! Shred one sweet potato into pieces with a tablespoon of wheat flour, mix one free range egg and sear with extra virgin olive oil. Add fresh slices of apple or strawberries to top.

Healthy Potato Soup: Needing a unique side item for tonight’s dinner? Instead of making the same old boiled potatoes, try adding a few extra ingredients and making it potato soup instead! All you need is a couple of pounds of potatoes, organic garlic, onions, carrots, fresh bay leaves, and some parsley to taste. Add 1 cup of organic low-fat or skim milk along with organic or fresh, drained chicken broth. Boil for about 20 minutes and voila! Pair this with some boneless skinless chicken breast or make it a vegetarian meal by itself.

Baked Sweet Potato Fries: Craving fries tonight? Keep it healthy. Slice sweet potatoes into strips, place on a baking sheet and brush with extra virgin olive oil and bake for about 25 minutes. Try turning them half way through to ensure thorough cooking and the perfect crunchiness. These spuds will be a great hit with the kids. Pair your sweet potato fries with your favorite entree and get ready for immediate raves from the family!

Roasted Potato and Spinach Salad: You didn’t think we would let you loose without a salad did you? If you’re looking for a light side to add to your entree tonight, try this healthy idea. Dice up your favorite potato, add garlic, rosemary, and garlic, brush with extra virgin olive oil and bake for about 25 minutes, remove, and toss with spinach and asparagus! Lightly top with a vinaigrette and you’re ready to serve!
