Tomato, Hummus, and Spinach Sandwich
Ingredients
- 2 slices multigrain bread
- 2 tablespoons roasted garlic hummus or hummus of choice
- 3 tomato slices
- 1/2 cup baby spinach
- 1/8 teaspoon salt a pinch sprinkled on
Instructions
- Toast multigrain bread (if desired). Spread hummus on top of one slice of bread. Top with tomato slices and layer with spinach. Spinkle on salt. Place the second slice of bread on top. Serve and enjoy!

How do you get 4 servings out of 2 slices of bread? I hope that this recipe is supposed to be 1 serving.

I would make only one change to this perfect sandwich. Sprinkle the salt on the tomato. Not only will the salt slide off the spinach, but a little salt on a tomato is divine.
If you use Nature’s Own Life bread that is one point a slice you can have the whole sandwich for 4 points

Delicious sandwich. I used Oroweat Sandwich Thins 100% Whole Wheat and 1 roll (as they call it) top and bottom was 4 points. Quick and easy lunch. Thanks for the recipe!

HALF a sandwich is the serving size? Please just give nutritional info and calories for a whole sandwich. (p.s. looks delicious, looks doable for a quick and easy meal.. but most would eat a whole sandwich, not half)
