What could be better than pizza for breakfast? How about a breakfast pizza loaded with protein, fiber, and tons of flavor? With less than 5 ingredients, this healthy pizza recipe is perfect for busy mornings. Avocado Breakfast Pizza is simply a tortilla topped with avocados and a fried egg. Let the yolk of the fried egg burst open onto your pizza and dip each slice into the yolk. The rich flavor of the egg is complemented perfectly by the cool, fresh taste of avocado. Yum!

Avocado Breakfast Pizzas

Toss together a breakfast pizza before work and fill yourself with the energy you need to get through your day.

Ingredients

  • 2 whole-grain tortillas 6 inch diameter
  • 2 eggs
  • 2 teaspoon olive oil
  • 1 avocado peeled and seeded
  • 1 teaspoon lemon juice
  • salt and pepper to taste

Instructions

  • First, warm tortillas in the microwave for approximately 30 seconds. Set aside.
  • In a small bowl, combine the avocado and lemon juice. Mix well until the mixture has a smooth consistency. Season with salt and pepper to taste.
  • Spread the avocado mixture in an even layer on both tortillas. Set aside.
  • Heat a skillet greased with the olive oil at medium heat until just hot enough to sizzle a drop of water.
  • Break eggs and gently add to the skillet. Immediately reduce heat to low.
  • Cook slowly until whites are completely set and yolks begin to thicken but are not hard.
  • Place warm eggs on top of the tortillas and season with salt and pepper as desired.

  2. Thank you so much for providing nutritional info for those of us on WW new Smart Points program that includes sat fat and sugars.

    This particular combo is one of my favorites that I hope people will try. I get lower points using a good healthy whole wheat toast instead of the tortilla.

    For Weight Watchers, 9 Smart Plus points is more than I will spend. I try to keep it at 5-6. Breakfast.

  3. Hi: I did add 2 garlic cloves, minced, to the avocado. It was delicious !!!!!!
    Thinking of the calories added with it thoug :-/

    1. Ralph, The serving size is one pizza per person. The recipe makes two servings. Feel free to only make one.

  4. Hi, Love the sounds of this, but worried about the fat content… Is the 24g fat in this dish for the entire dish, or is it in one serving? Same with the calories – 299 per pizza or 299 for 2 pizzas? Thanks!
