BBQ Chicken Foil Packets
Ingredients
- 24 to 32 ounces boneless and skinless chicken breasts cut into 1 inch cubes (4 pieces)
- 1 cup BBQ sauce no sugar added
- 1 green bell pepper cut into 1 inch cubes
- 1 red onion cut into 1 inch cubes
- 1 teaspoon kosher salt
Instructions
- Pre heat grill to medium high heat.
- In a medium mixing bowl, combine the chicken and BBQ sauce. Mix well. Lay 4 large sheets of foil on a flat surface and lightly spray with non-stick spray. Divide chicken and BBQ mix between each of the 4 foil sheets.
- Top with green pepper and onion, dividing evenly between all 4 foil sheets. Sprinkle each with salt. Tightly fold in all four sides so the foil creates a pocket and is sealed tightly.
- Place on grill and cook with the grill lid closed, for 20 to 30 minutes or until chicken is cooked through. Vent the foil packet before opening by poking each with a knife to release steam. Serve with your favorite veggie side dish!

I am going to try this but put it in the oven and I will have lunch for 4 days..
That’s a great idea! You can place the packets on a baking sheet and bake for 20 to 25 minutes at 400. Baking is a great alternative to grilling and will taste just as delicious!

Any suggestion brand for a no added sugar BBQ sauce that tastes good?
Kristin, I like Annie’s BBQ Sauce, it doesn’t have refined sugar. Look for one with dates, honey, maple syrup, or molasses.
Can I do them over night and put In the refrigerator?
