You'll think of this healthy, on-the-go snack as a treat!
Store-bought muffins. Candy bars. Cheese and cracker packs. What do these have in common? They’re easy to throw in your bag for a quick snack on the go, whether for you or for the kids. But between the sugar in storebought muffins, the fat and sugar in candy bars, and the processed and unpronounceable ingredients in most packets of cheese and crackers, that’s a whole lot of unhealthy choices to be carrying around with you from day to day.
Enter these Broccoli Cheddar Quinoa Cups. They’re delicious snacks that are perfect for bringing with you on the go, and kids will be more than happy to pop one in their mouths when they’re feeling like a snack while you’re out and about. Plus, they’re made with only whole, healthy ingredients. Quinoa provides protein, fiber, and antioxidants, while eggs are a great source of protein, potassium, and healthy fats. Broccoli is a nutrient powerhouse, and full of fiber, keeping you full and energized throughout your day. And we use a small amount of cheddar cheese to add flavor, but not so much that we overwhelm this healthy quinoa recipe with excess fat and calories.

Hi ! Is the broccoli raw or cooked before chopping ?
Robin, The broccoli is raw before adding.
can you substitute the eggs?
Marie, You can substitute the eggs with any egg replacer/ egg substitute you can find in the stores.
This says it makes 6 cups and a serving is 1 cup, but the text of the recipe says to spray 10 muffin cups…? Which is correct?
The recipe yields 6 servings, not 10. It's been updated now. Thanks for letting us know about the mistake!
What is quinoa
Mary Lou, Here's the article that explains: https://skinnyms.com/6-steps-to-perfect-quinoa/.
Is this made in regular muffin tins or mini ones?
Hi Cathy, Either will work fine! Enjoy. 🙂
Are the calories per muffin for a mini muffin or regular size muffin? Thank you.
Paula, The serving is for a regular size muffin pan.
I made then today with my kids… delicious!!!! Seriously! Really yummy. I will be making these on a regular basis. I chopped the broccoli and cheese (separately) in a food processor so it was very quick and easy to prepare. Thanks for the great recipe!
Cathy, You are welcome. We are glad you enjoyed it!
Can I use frozen broccoli or does it have to be raw?
Frozen will work as well. 🙂
Can I use a brown rice & quinoa mix instead of straight quinoa? Thanks!
Deb, That may work, but we are not sure as we haven’t tested it. Rice is a bit heavier. If you try it, do let us know how it goes.
Deb, Sure, that would be fine! 🙂
Should it be served hot or cold?
Can it also be served as an appetizer?
Wendy, Yes, they can be appetizers. Hot or cold will depend on your preference. For me, they’ve got to be at least warm. 🙂
Can I freeze them and reheat in microwave?
Great questions, Melissa! You can make these ahead to freeze and reheat. I suggest slightly under cookie the Broccoli Cheddar Quinoa Cups before freezing and reheat using your desired method (oven or microwave) until hot and cooked through.
