This superfood recipe tastes delish!
Skinny Ms. loves superfoods! There’s just no better way to nourish your body than with nutrient dense deliciousness. Here, we bring you a superfood stew that is sure to please. It’s similar to minestrone, except it has chicken and wild rice in it. Enjoy!
Slow Cooker Chicken and Wild Rice Superfood Stew
Ingredients
- 4 carrots medium, chopped
- 1/4 cup white onion or yellow, chopped
- 1/2 cup wild rice dry
- 4 cups spinach fresh, tighly packed
- 1/2 pound crimini mushrooms sliced
- 1/2 pound broccoli cut into small florets
- 2 garlic cloves minced
- 4 vegetable bouillon cubes no salt added
- 4 boneless skinless chicken breasts raw, cut into 2 inch chunks
- 4 cups chicken broth
- 28 ounces diced tomatoes canned, with juice
- 15 ounces kidney beans canned
Instructions
- Add ingredients to the slow cooker in the same order as above. For example, place carrots on the bottom, followed by rice, spinach, mushrooms, broccoli, garlic, vegetable bouillon, chicken, tomatoes and lastly beans. Cover and cook on low 6-8 hours.

Could you substitute kale (I haven't looked at my superfood list) for the spinach? I love the flavor it brings!
Kale would work as a replacement for spinach.
do you cook the rice in the crockpot as well- or separate?
In the slow cooker with the other ingredients. Be sure rice is completely submerged in liquid…place on top of veggies, under chicken.

It doesn’t say what to do with the chicken. Do you put the chicken breast whole and shred it after it’s cooked or do you cut it into cubes to cook?

Are the mushrooms sliced or whole? Are the beans drained and rinsed or dump in with liquid? As someone who is not a natural cook and has to follow a recipe, I wish you were more specific.
Rachel, slice the mushrooms. Drain and rinse the beans in order to remove sodium but it’s not required. Enjoy!
decent substitute for broccoli?

Dolores, You can stir midway through but you don't have to.
Do you dissolve the bouillon cubes in water before adding? Can you use a liquid vegetable broth such as Swanson's ?
Judi, The bouillon cubes will dissolve while cooking with everything else. Just remember to stir a few times if you do that. Otherwise, a liquid vegetable broth will work instead of the cubes and water.

Judi, You can add one additional cup of chicken broth and add 1 teaspoon or so each of spices- celery salt, oregano, thyme would all be good options. You should also add a bit of salt such as 1/2 teaspoon to 1 teaspoon.
Are there onions in this recipe? It looks like there are onions on the top of the liquid

Would brown rice work instead of wild rice? I don’t have wild rice on hand. I’ve loved every recipe that I’ve tried on your site so far.
