Chipotle Honey Chicken Skewers

Ingredients

  • 32 ounces boneless and skinless chicken breasts 4 pieces
  • 1/4 cup honey raw, unfiltered preferred
  • 1 tablespoon tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon chipotle chili powder
  • 1 garlic clove very finely chopped
  • 1/2 teaspoon salt optional

Instructions

  • Slice chicken into very thin strips with a very sharp knife. Thread accordion-style onto wooden skewers.
  • In a small bowl, whisk together honey, tomato paste, apple cider vinegar, chipotle chili, optional salt, and chopped garlic. Spoon sauce over skewers.
  • Cook skewers on a hot grill and cook for 10-12 minutes or until chicken is fully cooked, basting with sauce and turning every 2-3 minutes to evenly cook the entire skewer of chicken.
  • Alternately, the skewers can be baked in an oven preheated to 400 degrees for 16-18 minutes, or until fully cooked.

Notes

1 skewer is made using about 4 oz. of chicken.

  1. I did the recipe in weight watchers recipe builder. I used 32 ounces of Chicken and the rest of the recipe as is. For a serving of 8 it came out to 5 points plus per skewer. How did you get 12 pts.?

  2. I’ve made two batches of the marinade – one for my fam (a little more honey, a little less chili, and I added a splash of real apple cider) and one for myself (added quite a bit of cayenne).

    I am SO PLEASED with this flavor. I have been eating chicken for weeks and I’m sick of it. The rich flavor of the tomato paste and the splurge of a food honey is so worth the points.
