Chipotle Taco or Burrito Filling

Satisfy your Mexican food craving with this quick and easy slimmed down version.

Ingredients

Filling

  • 1 1/2 pounds turkey breast ground
  • 1 onion medium, chopped
  • 2 garlic cloves minced
  • 1 cup corn frozen, organic
  • 15 ounces canned black beans no sugar added, drained and rinsed
  • 7 ounces canned chipotle peppers in adobe sauce
  • 10 corn tortillas or whole wheat

Optional Garnishes

  • cilantro freshly chopped
  • Greek yogurt fat-free, plain
  • salsa no sugar added, low sodium

Instructions

  • Heat a large nonstick skillet over medium-high heat. Add onion and garlic; heat until garlic is fragrant about 4 minutes.
  • Add turkey and brown; crumbling with a wooden spoon for about ten minutes.
  • Stir in the rest of the ingredients (from corn to salt and pepper)  and simmer 10 minutes.
  • Warm tortillas on stove or in microwave if you like (not necessary) 
  • Spoon 3/4 cup turkey mixture into each tortilla and garnish with a dollop of fat-free Greek yogurt and freshly chopped cilantro. There is SO much flavor in this dish, there is no need for cheese!

Notes

The can of chipotle chiles easily will make a second batch of this recipe. Save the extra few chiles for next time. Also, you can add a spoon of the adobo sauce from the can to the turkey mix. The chiles are an excellent substitute for any taco seasoning packet.

  1. Your Nutritional Info box lists 1/4 C as the serving size, but you have 3/4C listed in the directions.. Are the nutrition numbers for 1/4C or 3/4C? Thanks.

  2. I just made and did not fully eat because it is going to be my lunch for the week at work but I did dabble a bit for taste testing purposes lol. It was tasty and full of flavor. I did use two chipotle and could not find the paste but used some left over int he can. I also added some spanish pimenton and cumin for added flavor because I used a very lean ground turkey. I accidentally used creamed corn instead of a small can of golden corn lol. Either way I love this because I try to watch what I eat throughout the week and this is perfect with some corn tortillas. Will make again, hopefully my boyfriend will love too.
