Ingredients

  • 3 sweet potatoes large, scrubbed
  • 2 teaspoons olive oil

Instructions

  • Rub oil on the sweet potatoes then wrap each potato in foil and place in the crock pot. Cover and cook on low 5 – 7 hours or until tender.
  • Remove sweet potatoes from the crock pot, carefully remove foil, and slice down the middle lengthwise.

    1. Katie, You can, but it’s less messy and works better with foil because the heat isn’t escaping from inside the potato. 🙂

  1. I do this without using the oil. Just clean the potatoes, wrap them and out them in the slow cooker. They come out great! I always cook a few extra to take for lunch at work during the week.

    1. Dried fruit, honey, and maple syrup are all delicious options! You can also try more savory toppings such as plain Greek yogurt or ginger.
