Crock-Pot Rustic Chicken Stew

With little prep, this slow cooker stew is a great way to eat a warm and comforting meal on a busy day.

Ingredients

  • 4 boneless and skinless chicken thighs optional chicken breast filets
  • 3 carrots medium, peeled and round slices
  • 3 potatoes medium, peeled and cubed
  • 2 tomatoes medium, or 8 cherry tomatoes, coarsely chopped
  • 1 onion medium, coarsely chopped
  • 1 celery stalk coarsely chopped
  • 3 bay leaves torn in half
  • 3 cups chicken broth fat-free
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper freshly-cracked
  • 1 tablespoon cornstarch

Instructions

  • Combine all the ingredients, except the cornstarch, in the crock-pot then set on low for 8 hours, or high 4 hours.
  • When the chicken is almost cooked, combine the cornstarch with one cup of the stew liquid in a small bowl. Whisk until the mixture becomes smooth. Add the cornstarch mixture to the chicken stew, stir and cook until it thickens up slightly.
  • Before serving, drizzle with the extra-virgin olive oil and stir to combine.

  1. Oh my sweet Lord! I'm totally making this! Right now I have left over turkey meat, so I'm just going to use turkey instead of Chicken, but I'm totally making this!

  2. Tried it today. Very tasty despite me over-cooking it slightly ( I misread the high/low cook time instructions). I’ll be adding it to my repertoire.

    1. Emily, Frozen chicken or other meats should not be used in the slow cooker due to bacteria. Please defrost before adding to recipes made in the slow cooker.

    1. Angelica, I removed the olive oil since it’s not really needed. When the chicken is almost cooked, combine the cornstarch with one cup of the stew liquid in a small bowl. Whisk until the mixture becomes smooth. Add the cornstarch mixture to the chicken stew, stir and cook until it thickens up slightly. 🙂

  3. This is really good! definitely will make it again. I just wished the it showed the serving size per the 11 Smart Points…servings is 4. So is one serving size 2 bowls or how many ounces? One serving is really big which is good!

  4. Do you have to use the cornstarch? I’ve noticed a lot of these recipes and others I’ve been looking at it call for that. I’m trying to eat healthy and cut out unnecessary carbs and that just seems lime a load of carbs to add

  5. I read that when making a beef stew you are supposed to use chicken broth. So is this recipe better with beef broth fat free?
