Add these to almost any meal!
Just in time for fall, these quinoa cakes are the perfect complement to a healthy, veggie-packed meal or a great salad topper! These are inspired by some of my favorite fall flavors as well as the fabulous Tone It Up ladies who introduced me to quinoa cakes in the first place!

What does the applesauce do? Can I leave it out, or use something else in it's place?
Terri, The applesauce adds moisture, which helps the cake bind together, and a touch of sweetness. If you leave it out, use an extra egg white in it's place. You should be fine without adding sweetener, as it really does not impart much and the sweet potatoes are sweet enough on their own;).
We have egg allergies in our house… any recommendations for an egg white substitution here?
Jennifer, You can use 1/2 tablespoon chia seeds and 1-1/2 tablespoons water to substitute for the egg white. See the preparation here: http://www.foodrenegade.com/how-make-egg-substitu…
are these freezable?
Laura, I think so, but haven’t frozen them yet. If you do freeze them, be sure to defrost in the fridge.
