Why bother with bland, powdery store-bought pancake mix, when this gluten-free pancake recipe only requires four ingredients? Combine superfoods and flip the healthiest pancakes you’ve ever served to a hungry crowd! Bananas, rich in potassium, and eggs, packed with protein and omega-3’s, ensure a healthy start to your day. Add quick oats for a bit of fiber, and great tasting cinnamon (another phenomenal superfood) and you’ve got a sweet, warm stack of crowd-pleasing pancakes! Flourless Banana Pancakes

Super easy to make with only four ingredients, you can't beat these tasty flour-free pancakes.

Ingredients

  • 1 banana
  • 2 eggs
  • 1/2 tablespoon quick oats
  • 1/8 teaspoon cinnamon

Instructions

  • Preheat skillet for pancakes.
  • Place banana in a bowl and smash it with the back of a fork or spoon.
  • Add eggs, oats and cinnamon; stir to incorporate.
  • Slowly pour pancakes mixture in skillet.
  • Cook pancakes until the desired doneness.
  • Place on a plate and serve.
  • Can top with fruit, berries or low cal syrup.

  1. The only thing I would add is that most oats are not gluten free, so if you are looking for a gluten free recipe, you have to specifically buy oats that are certified gluten free (most oats are contaminated from wheat crops). Trader joes has the cheapest I can find, but because they are old fashioned oats, you might need to grind them up in a coffee grinder or food processor first…..

      1. I just use 1/4 cup egg beaters and 1 banana. They turn out very well and saves the points from the oats. They are not really needed in my opinion. It makes 4 nice size pancakes.

  2. I know this recipe is a bit older, but is it okay to make the mix the night before and pour the pancakes in the morning? I only ask because I need to be out of the house by 5:30 AM and making things the night before makes that easier!

    1. Unfortunately, you can't make the pancake batter the night before, as the texture will become gluey, but you can make your pancakes the night before. Store in an air-tight container and reheat on the griddle… or, freeze with pieces of wax paper between each pancake in a freezer bag.

  3. Christine, perhaps you can at least pre-measure out and put in a bowl the oats and cinnamon? Then in the a.m. you will just have to add two eggs and one banana. The measuring step would have been done. Any idea, folks, on what the new SmartPoints conversion is for these?! They are yummy:)

  4. These are great and my whole family enjoys them. I add a dash of vanilla extract which makes the base awesome. This morning I also added some unsweetened coconut flakes to the mix and we loved it, so I will definitely be doing that again. Thanks!

  5. I got all excited because it says the recipes are Points Plus – but they are all Smart Points. How do I convert them back to Points Plus?

    1. Cindy, Either way is fine. If you would like some small banana chunks, which I do, then leave in some lumps. 🙂

  6. My daughter makes them daily and uses desicated coconut. Or finely chopped coconut.
    This is the recipe, it is very good.

    Mash one regular size banana.
    Add 1/4 cup of chopped coconut, or very small flakes
    1 egg
    2-3 Tbsp. of tapioca flour.

  7. why do you count this as 4 smart points? When I built the recipe in the WW app it was 0 smart points. 1/2 T of oats split in 2 (2 servings) is 0 pts. This was under the Freestyle plan.

    1. Hi Nancy – the 4 SmartPoints was under the old calculations. The correct Freestyle plan points is 0! We have updated the recipe to reflect. Thank you!
