Green Bean and Zucchini Salad

A special salad with a slight crunch, this dish is perfect as a side or a snack!

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1 cup green beans broken, remove strings
  • 1 zucchini sliced
  • 1/2 cup bean sprouts
  • 8 almonds sliced
  • 2 garlic cloves minced
  • 1/2 lime or lemon, juiced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • sea salt to taste

Instructions

  • Combine all ingredients in a medium skillet, saute over medium heat just until heated thru, about 5 minutes. This side salad also makes a yummy afternoon snack, either hot or cold. Drizzle with additional lime juice and serve. For added protein sever over a bed of quinoa.

  1. At the top of the recipe it says that it serves 4 but then at the end it says serves 2. Just wondering which it is.

    1. Kimmiek1967, The Green Bean and Zucchini Salad can be eaten on its own or over a bed of quinoa for added protein.

    1. Carey Hass, You can just omit the sprouts entirely and have the salad without it, or substitute them with
      basically any vegetable, such as cucumbers.

  2. You show this as 6 smart points – is that including the quinoa? it isn’t included in the recipe but mentioned that the salad can be served on a bed of it.

  3. I can’t get the nutritional data to add up.. if it is 207kcal per serving without quinoa then the whole zucchini salad would be over 600kcal. It seems for correct that 207 is for the whole recipe and not per serving?
