French toast is a rich, sweet breakfast treat. Our slow cooker twist is healthier and much easier to prepare than traditional French toast. Whether you are hosting several people at a brunch gathering or preparing a romantic breakfast in bed for two, this meal is sure to please.

Overnight French Toast Casserole

Easy to make and healthier, this version of french toast is going to become a regular in your household.

Ingredients

  • 13 ounces whole wheat French bread loaf, sliced into 20 pieces
  • 8 eggs large
  • 2 cups low fat milk optional almond milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut palm sugar or honey

Topping

  • 1/4 cup sucanat optional coconut palm sugar or honey
  • 1/2 cup pecans minced
  • 1 teaspoon cinnamon

Instructions

  • Lightly mist a 9" x 13" x 2" casserole dish with non-stick cooking spray. Arrange bread slices in two rows, slightly overlapping pieces. In a large mixing bowl, whisk together eggs, milk, vanilla, cinnamon and sucanat. Pour mixture over bread, making sure all bread is moist. Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Combine topping ingredients, sprinkle evenly over the top of bread and bake 35 to 40 minutes, or until golden. Serve with fresh berries or a drizzle of pure maple syrup.

Notes

Whole Wheat French Bread can be purchased in the bakery section at most Walmart Super Centers, for about $1.00.

  1. How long should it soak for? Not sure if I could prepare in evening or if I should wait right before bed? Is 14 hrs too long?

    1. Annie, You can prepare first thing in the morning and allow to soak for about 30 minutes before baking. That will work too!

    1. Since there is still a topping to sprinkle over the casserole, you will need to remove the cover.
