Southwestern Low Calorie High Protein Breakfast Burrito

Ingredients

  • 6 cups baby spinach loosely packed
  • 15 ounces black beans can, rinsed and drained
  • 4 egg whites
  • 2 eggs
  • 1/4 cup feta cheese optional, shredded cheddar or Mexican cheese
  • 1/2 cup salsa recipe, optional Pico de Gallo
  • 6 tablespoons Greek yogurt fat-free
  • kosher or sea salt to taste
  • 6 whole-wheat wraps or tortillas; 8 inch

Instructions

  • To warm tortillas, preheat the oven to 300 degrees Fahrenheit. Stack the tortillas, wrapped in foil and placed on a cookie sheet, and warm them for 15 minutes while preparing the remaining ingredients.
  • In a bowl, whip the eggs with a fork. Add them to a non-stick skillet, over medium-low heat, and stir frequently until cooked through.
  • Meanwhile, coarsely chop the spinach.
  • In a large skillet over medium heat, add the black beans and spinach. Heat until the spinach is wilted, approximately 3 minutes.
  • Evenly distribute the eggs, spinach, and bean mixture in the middle of the wraps (leaving about 2 inches on one end for folding), evenly add cheese (optional), salsa, and Greek yogurt evenly over the filling. Fold wraps over and under on the ends.

    1. Vicki, Yes, wrap them in saran wrap tightly and microwave from frozen to serve. Remove the saran wrap and place on a microwave safe plate to reheat.

  1. Just curious. Why feta in a southwestern burrito? I live in Arizona, and feta just doesn’t go here in southwestern food. The rest sounds fantastic!

    1. Karen, I updated the recipe to add cheddar or Mexican style as an option. We used Feta since it’s typically lower in fat. Hope this helps. 🙂

  2. I made this recipe this past weekend as my breakfast meal prep for the week. I used cheddar cheese, as I think it’s more in keeping with the Southwestern theme and didn’t warm the tortillas since I was going to freeze the burritos. I must say, I was pleasantly surprised. This is one of the most delicious breakfast recipes I’ve found. Will definitely keep it in my meal prep rotation.

    I wrapped each burrito in foil, then place in individual baggies inside a large freezer bag. Take one out the night before, and keep it in the fridge. By the time I get to work, it’s pretty much thawed. Nuke for 90 seconds (after removing the foil). Absolutely delicious!

  3. I’ll admit I was doubtful this wrap would be good. But I was pleasantly surprised. It was really good. The changes I made was omitted the yogurt and added green onions and Trader Joe’s 21 seasoning salute. This is definitely a keeper. Thanks for sharing!5 stars
