The fresh ingredients used to create these tasty little egg muffins not only taste amazing, but they’re also loaded with essential nutrients. This recipe offers a hefty serving of protein and healthy fats but is keto-friendly and just over 200 calories per serving. That said, there are a few ingredients worth highlighting.

Eggs are obviously the most prominent ingredient in this recipe. They are considered a superfood because they contain all nine essential amino acids. These complete proteins cannot be made by the human body, which is why they must be included in your diet. They are responsible for things like immune function, tissue growth and repair, nutrient absorption, energy production, and more! 

This recipe also contains several different vegetables, including yellow onion, green bell pepper, brown mushrooms, and spinach. Each of these veggies offer different quantities of vitamins and minerals, including vitamins A, B, C, E, and K, as well as iron, calcium, and more! These nutrients are vital for a healthy functioning body and mind.

Quick & Easy Egg Muffins

Make these easy egg muffins at the beginning of the week to have a go to breakfast every morning!

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion thinly chopped
  • 1 green bell pepper thinly diced
  • 1 cup brown mushrooms thinly chopped
  • 1 cup spinach chopped
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat the oven to 350 degrees
  • Heat olive oil in a medium pan
  • Add onion and saute for 2-3 minutes
  • Mix in bell pepper and mushrooms and saute another 4-5 minutes or until slightly browned
  • Add spinach and stir until slightly wilted
  • Remove from heat and let cool while prepping the eggs
  • In a bowl, whisk eggs together, then add cheddar, salt, pepper, and sautéed veggies and mix together
  • Pour into greased muffin tins and bake for 10-12 minutes, or until muffins are firm on top
