And you don’t need an expensive, clunky ice cream maker for this healthy ice cream recipe. Simply add your frozen strawberries, Greek yogurt, balsamic, and honey to your food processor, and blend until smooth and creamy. The strawberries, full of antioxidants and dietary fiber, are full of a sweetness that’s enhanced by the gourmet blend of balsamic and honey. And Greek yogurt gives this recipe a creamy texture while loading you with lean protein. Serve and enjoy immediately, or freeze for a special treat any time.

Skinny Strawberry Ice Cream

A creamy guilt-free treat that the kids will love, this strawberry ice cream doesn't even require an ice cream maker and is quick and easy to make.

Ingredients

  • 16 ounce strawberries bagged, frozen, organic
  • 3/4 cup Greek yogurt plain, fat-free
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons honey

Instructions

  • Add all ingredients to a food processor and pulse until blended and creamy. It will take a few minutes to get all the strawberries well blended. Recommend pre-sliced strawberries if available.

Notes

TIP: For a vegan version, use canned coconut milk...about 1/2 cup or So Delicious brand coconut milk yogurt. Also, for a chunky ice cream add 6 -8 fresh strawberries after processing.
The ice cream is best if eaten right away but can be frozen in a freezer-safe container for up to one week.

    1 banana, sliced and frozen
    1 handful of strawberries, frozen
    1-2 tablespoons coconut milk
    1 teaspoon vanilla extract

  3. can I substitute ANYTHING for vinegar? Vanilla or almond or lemon extract ? Tryin to make it with things I already have. I dont have anything except apple cider vinegar and Regular vinegar 🙁

    1. Danielle, Apple cider vinegar will also work. If you use vanilla or almond extract, only use 2 teaspoons.

  4. My WW app only computed 3 points per serving for these ingredients (the strawberries being “free” of course).
