Slow Cooker Caramelized Chicken

Here is a fantastic slow-cooked chicken recipe that can be used in a variety of dishes.

Ingredients

  • 1/2 cup honey
  • 1 1/2 tablespoons apple cider vinegar
  • 1/4 cup soy sauce low-sodium or lite; optional tamari
  • 1 tablespoon sesame oil
  • 2 garlic cloves finely chopped
  • 3 green onions chopped
  • 1 pound boneless and skinless chicken breasts cut into 1 inch cubes
  • 1/8 teaspoon cayenne pepper optional
  • 1/4 cup pineapple juice

Instructions

  • Combine all of the ingredients in a slow cooker. Cook on low heat for 3-4 hours until chicken is tender. Remove from the slow cooker, lay the chicken out on a foil-lined sheet pan, and cover with the liquid from the crockpot. Broil for 4 minutes or until chicken is caramelized. Serve with your favorite vegetables.

    1. Hello Teresa, We just changed the soy sauce to low sodium and were able to half the sodium content. Soy sauce generally has a lot of sodium.

  1. Nice idea, but the meat will steam and boil in all that liquid. There's no way you'll get that kind of a glaze in a slow cooker, you need a dry heat for that.

    1. Sandra is completely right, mine didn't look at all like that, but it was very good! Served it on rice and my kids loved it.

  2. If sesame oil is omitted would the taste be affected very much? I just threw out a bottle because I only used a tablespoon or so and never used it again.

  3. I need at least 2 pounds of chicken to feed my family. Would you double all of the ingredients if you double the chicken?

  4. I made this over the weekend and I did not have good results. Not sure what went wrong but it did not turn out well.

  5. I have all the ingredients on hand to make this except the pineapple juice, is there anything I can use as a substitute?
