Slow Cooker - Hot Chocolate Steel-Cut Oatmeal

Keep it simple and clean with this scrumptious oatmeal and its comforting chocolatey flavor.

Ingredients

  • 1 cup steel cut oats
  • 4 cups water
  • 1/2 cup coconut milk
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 tablespoon coconut palm sugar or pure maple syrup
  • 8 liquid stevia drops (or an extra tablespoon of sugar)

Instructions

  • In a large bowl, combine the water, milk, vanilla, and stevia. Whisk in the cocoa, sugar, and salt.
  • Finally, stir in the oats. Oil the inside of your slow cooker (this prevents the oatmeal from sticking). Pour in the above mixture.
  • Set your slow cooker to LOW for 1-2 hours, and turn it to KEEP WARM before finally retiring to bed. In the morning, give it all a stir and feast! Top with some shaved chocolate if you’re feeling really decadent!

    1. I made this last night and put it in a seperate glass bowl, which I sat inside my slow cooker. I filled the crock of the slow cooker with water until it was half way up the side of the glass bowl with the oatmeal in it. I cooked it on low overnight and the results were perfect.

  3. The recipe sounds great but I had calculated the points based on the nutritional values listed here and it came to 6 points..

  4. How are you calculating the nutritional value? 1/4 c of dry Steele cut oats has approximately 150 calories, cooking the oats doesn’t change the calories. The recipe calls for 1 c of oats and serves 4, so I am essentially eating 1/4 c. What am I missing?

      The data is correct. 1/4 cup of dry oats is only 74 calories. 1 cup of dry oats, plus any extra ingredients, comes to about 4 (1-cup) servings when cooked.
