Slow Cooker Sweet & Savory Sweet Potatoes

This sweet and savory sweet potato recipe is the healthy version of a holiday favorite.

Ingredients

  • 1/4 cup extra virgin olive oil (or optional butter)
  • 2 sweet potatoes large, peeled or scrubbed well with the peel on (if organic) and diced into 1-inch cubes
  • 2 cloves garlic minced
  • 1/4 cup coconut palm sugar
  • 1/8 teaspoon red pepper flakes
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cinnamon

Instructions

  • Add extra-virgin olive oil to the slow cooker and preheat to high while preparing potatoes and garlic. Add potatoes and all remaining ingredients to the slow cooker and toss to combine.
  • Cover and cook on high for 2-3 hours or low for 4-5 hours. We recommend using a 4-6 quart slow cooker.
  • Garnish with chopped parsley, if desired.

  1. How many servings is this recipe? Since a serving size is 2/3 cup – does this make only 4 servings? Can the recipe be doubled? If so, how long should it cook?

    1. Jody, Yes…it makes about 4. I just made this yesterday and doubled the recipe. You'll need to use a 6 quart slow cooker and the time should remain the same. I'm not exaggerating when I say, "This is my all time favorite sweet potato recipe"! It's always on our Thanksgiving menu.

  4. These look yummy, I will definitely try them. Is there another ingredient pictured in the dish that isn’t on the ingredient list? Picture looks like it has mini meatballs or some other veggie in it along with the sweet potato

    1. Jeannie, I believe that is the peel, if you choose to leave the peel on. If the potatoes are organic, and you scrub them well, the peel can be left on if desired. Otherwise, we recommend peeling the potatoes for the recipe.

  5. Wow <3 my kitchen smelt amazing whilst these were cooking. I swapped sugar for honey as it was all I had. I doubled everything except honey, I just used an extra couple of tablespoons. I also used a Caribbean curry powder which worked really well with the cinnamon. This will make a lovely side dish for my famous jerk chicken and pineapple skewers.

The curry, red pepper flakes, cinnamon, and black pepper makes this recipe…in my opinion. I came up with this recipe several years ago after researching what spices gp best with sweet potatoes.
