Something about waffles always feels so sophisticated to me. Pancakes are for snow days and lazy Saturdays. But waffles? Waffles are for Sunday brunch and romantic breakfast for two. This beautiful strawberry waffles recipe just makes me want to surprise someone with a special breakfast.

And by someone, I of course mean myself.

Fun fact: I thought I hated waffles for almost 20 years. Until college, I had only had those frozen toaster waffles, and lets just say I was not impressed. I was always shocked and even offended by people who preferred waffles to pancakes. I couldn’t imagine what was wrong with them.

And then, one beautiful morning in the dining hall, I suddenly understood. My roommates talked me into making a big, fluffy Belgian waffle in the waffle iron, and I did not regret it.

From that moment on, it was love at second sight for me and waffles.

Unfortunately, eating giant dining hall waffles just isn’t a lifestyle my metabolism can support. But the good news is, this healthy strawberry waffles recipe is just as fluffy and delicious. And bonus points, it’s gluten free!

This recipe is super simple, but your first step is to buy a waffle iron. I bought my sister one this year for Christmas on a whim. She was definitely skeptical at first, but she too eventually had a waffle epiphany. She has looked up lots of fun new recipes, and next weekend she’s trying this one out (per my suggestion.) Turns out my lame gift wasn’t so lame after all.

Like I said, there are no real tricks for this recipe. For these waffles, just use the gluten-free flour of your choice. And if gluten isn’t a concern, feel free to substitute for your preferred kind of flour.

This recipe also uses coconut oil as well as mashed bananas and strawberries. Putting mashed fruit in the batter helps with texture, but also adds natural flavor and sweetness. The strawberries also add a light pink hue that make this breakfast perfect for Valentines Day, baby showers, and other special occasions.

The rest of the ingredients that go into this strawberry waffles recipe are pretty standard. Just baking powder, baking soda, water, and skim milk will do it! Just combine all ingredients, and cook in a greased waffle iron.

As is, the recipe makes about four waffles, but you can adjust as needed.

Serve these waffles hot and topped with fresh sliced strawberries. These waffles are delicious and flavorful all on their own, but they are also delicious with a topping of your choice. Honey and maple syrup both work well, and you can never go wrong with a little whipped cream.

These waffles are tasty, healthy, and beautiful. They make a perfect breakfast for a special occasion or a romantic surprise. Or, you know, a romantic surprise for yourself.

Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup water
  • 1/4 cup skim milk
  • 1 egg large
  • 1 tablespoon coconut oil melted
  • 1 banana medium, mashed
  • 1/2 cup strawberries mashed
  • 1/2 cup strawberries sliced

Instructions

  • Preheat waffle iron.
  • In a large bowl, combine all ingredients except for sliced strawberries, and mix well.
  • Lightly spray the waffle iron with non-stick spray. Pour batter, about 1/4 cup, into the waffle iron, close, and cook according to the waffle iron's instructions. Typically, the waffle iron will beep or turn off a light to indicate the waffle is done. This varies by brand.
  • Remove the waffle and repeat with the remaining batter.
  • Serve hot with sliced strawberries on top. If desired add honey, maple syrup, or your favorite topping.
