You’ll love the way the flavors come together in this tasty dish. Add in the whole-wheat panko breadcrumbs to give the dish a crunchy finish and you’ve got yourself a winner! They’re perfect as an appetizer, but you could also serve them as the main dish with a side of rice, quinoa, or whole-wheat pasta.
Mushrooms as a Meat Replacement
If you’re trying to make more vegetarian dishes, you should start using mushrooms as a meat substitute. Ever tried a mushroom burger or made a pasta sauce heartier by using mushrooms instead of beef? Going plant-based is always a great way to cut down on saturated fat and calories, in addition to upping the nutrient content in any dish.
We love mushrooms for just about every meal. They have a delectable texture that reminds us of meat, so we never feel like we’re missing anything when we cook with them! It’s also great how versatile they are. They pair well with eggs in omelets, taste great on sandwiches and in veggie wraps, and are a great addition to dinner menus of all varieties.

Easy Stuffed Mushrooms Recipe
Ingredients
- 1 tablespoon olive oil
- 12 baby bella mushrooms clean by rubbing with a damp cloth, don't rinse
- 1/2 cup sweet onion diced
- 2 garlic cloves minced
- 1/4 cup sun-dried tomatoes finely diced, packed in olive oil
- 2 cups baby spinach torn into pieces
- 1/3 cup panko breadcrumbs we used whole-wheat panko
- 4 ounces feta cheese low-fat or fat-free
- 1/4 cup parmesan cheese
Instructions
- Preheat oven to 350 degrees.
- Remove stems from mushrooms and dice.
- In a medium skillet, add oil and heat to medium-low, saute onion, mushroom stems and sun-dried tomatoes until tender, about 4 minutes. Add minced garlic and continue to saute one additional minute. Add spinach and saute just until wilted. Remove from heat and add the feta cheese and breadcrumbs and only 3 tablespoons of parmesan, stir to combine.
- Stuff mushrooms with mixture, place on a cookie sheet, sprinkle with remaining tablespoon parmesan, and heat until cheese is melted, about 15 minutes. *Mushrooms are very hot coming out of the oven so be sure to cool a few minutes before serving. This appetizer is yummy warm or cold.
- Note: The mushrooms may release liquid, so when removing from the cookie sheet lightly dap with a paper towel before serving. Stuffed mushrooms are a perfect dinner party appetizer.

why is there no nutritional information?
The info is under the picture- and right above ingredients 🙂
Total servings? Serving Size??
Tricia, About 16 servings…one mushroom is the serving.
1 mushroom is 4 PP?
Carla, Thanks for the question. We have updated the nutrition values to reflect a more accurate yield and serving size. 2 stuffed baby Bella mushrooms are 4 points plus, or 3 points in the old weight watchers points system.
But it doesn't say serving size…how many mushrooms does the above apply to?!
JM, 2 mushrooms.
What can I use besides feta cheese?
Brenda, Goat’s Cheese, Ricotta, or Halloumi are all great options.
Love this recipe!! Would like to know serving size as well.
Gwen, 1 mushroom.
Serving size would be easier if there was a measurement like ounces or grams. A mushroom's size can vary greatly. giving the totals for the whole recipe would be helpful too. You could then take the total nutritional facts and divide by the number of mushrooms you get when you're done.
Do all their recipes not mention size of servings?
Patricia, Skinny Ms recipes do. We some from guest food writers that were not submitted with data.
Great recipe! It worked to put stuffing over smaller sized bella mushrooms too. Very tasty!
The recipe does not instruct when to add the feta cheese
R Morris, Yes it does…look at the recipe where it says to add the remaining ingredients. Thanks! 🙂
Remove from heat and add the remaining ingredients …
"remove from heat and add remaining ingredients"
"4 tablespoons cup parmesan cheese"
Bel, 1/4 cup
makes a great vegetarian dinner with filling on larger mushrooms and served with green veg of choice.
These are yummy! Any left over filling is part of a great breakfast.
Can they be frozen .?.
The certainly can be. Just know they could get a little slimy once thawed.
