Healthy Teriyaki Slow Cooker Roasted Pulled Pork

Ingredients

  • 2 pounds Lean Pork Loin Fat trimmed
  • 1/2 cup rice wine vinegar
  • 1 cup water
  • 1/4 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons fresh ginger minced
  • 4 cloves garlic minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh cilantro roughly chopped
  • 1/4 cup green onion chopped

Instructions

  • Combine all ingredients, except the cilantro and green onion, in the slow cooker. Cook for 4 to 5 hours on high or 8 hours on low.
  • Remove the pork loin from the slow cooker. Using two forks, shred the pork. Return the now shredded pork to the slow cooker. Stir in the fresh cilantro and top with green onion. Serve hot.
