Best Ever Strawberry Rhubarb Crisp

- 4 cups strawberries sliced
- 2 cups rhubarb sliced
- 2 tablespoons cornstarch
- 1/4 cup granulated sugar more if desired
- 1/2 teaspoon ground cinnamon
- 1/2 cup all purpose flour
- 1 cup rolled oats (quick oats are best)
- 1/4 cup whole butter diced
- 1/4 cup brown sugar
Preheat oven to 375, spray a casserole dish with non-stick spray and set aside.
In a large mixing bowl, combine the strawberries, rhubarb, cornstarch, and sugar. Mix well and spread in an even layer in the prepared casserole dish.
In a second bowl combine the remaining ingredients. Using a fork, pastry blender, or your hands, carefully mix the ingredients until the mixture resembles sand with some larger pea sized chunks. Spread on top of the strawberry mixture.
Bake for about 20 to 30 minutes, or until the top is golden brown. Serve hot or chilled.
