Best Ever Strawberry Rhubarb Crisp

Ingredients

  • 4 cups strawberries sliced
  • 2 cups rhubarb sliced
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar more if desired
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup all purpose flour
  • 1 cup rolled oats (quick oats are best)
  • 1/4 cup whole butter diced
  • 1/4 cup brown sugar

Instructions

  • Preheat oven to 375, spray a casserole dish with non-stick spray and set aside.
  • In a large mixing bowl, combine the strawberries, rhubarb, cornstarch, and sugar. Mix well and spread in an even layer in the prepared casserole dish.
  • In a second bowl combine the remaining ingredients. Using a fork, pastry blender, or your hands, carefully mix the ingredients until the mixture resembles sand with some larger pea sized chunks. Spread on top of the strawberry mixture.
  • Bake for about 20 to 30 minutes, or until the top is golden brown. Serve hot or chilled.
