Homemade Breakfast Cereal with Nuts and Honey

Ingredients

  • 4 cups old-fashioned oats
  • 1/4 cup walnuts, raw pieces
  • 1/4 cup almonds, raw pieces
  • 1 teaspoon cinnamon
  • 1/3 cup honey, raw
  • 1/3 cup coconut oil, melted

Instructions

  • Preheat the oven to 325 degrees.
  • In a large mixing bowl, add the dry ingredients and stir to combine. Combine honey and coconut oil in a small bowl, add to the oat mixture and mix thoroughly until oats are moist.
  • Spread cereal on a parchment-lined cookie sheet. Place in the oven and stir every 10 minutes or until the cereal has reached a golden brown color, approximately 25-30 minutes. Remove from the oven and let it cool completely.
  • Store in an airtight container. Add raisins or dried fruit before pouring in low-fat milk.

Notes

Tip: Do not store dry fruit with this cereal, as the moisture might cause it to lose its crunch.
Tip: Not a fan of nuts? Try adding 1/4 cup raw sunflower seeds, 1/4 cup raw pumpkin seeds, and 1/4 cup sesame seeds instead of the nuts. You might even like to add 1/4 cup fresh edamame in place of nuts. These all offer loads of protein and nutritional value.
