Instructions
To make the ginger syrup:
Chop the ginger root, peel on, in the food processor or by hand.
Bring the sweetener, ginger, and water to a boil over medium heat, stirring and pressing on the ginger pieces to release the juice. Once a syrupy consistency is reached, after about 5 to 10 minutes, remove from the heat and allow it to cool in another container.
To make the martini:
Shake vodka, ice, and ¼ cup syrup in a cocktail shaker or in a closed container with a lid for about 30 seconds or until the drink is cold. Pour through a cocktail strainer or other fine mesh strainer (to catch the ice and ginger pieces) and into a martini glass, and serve. Ginger Martini can be served with a slice of lime on the edge of the glass or in the drink.
